These brownies with Rice Krispies are so rich, and unique in taste that a small serving is all you need to help you feel satisfied. Perfect for bringing to a church function or gathering of friends and family because you can serve quite a few people from one batch!
What are goody bars?
I first started making these brownies over a decade ago after getting a recipe from a General Mills Bake with Betty Eent that I attended. Ever since then my husband begs me to make these delcious bars and I do. Somtimes I make the recipe below with homemade vanilla frosting instead of storebought but you can’t go wrong with making recipes simple and quick, am I right?
These layered brownies start with an actually baked brownie (made from a box mix) and are then topped with layers of vanilla frosting, chopped peanuts, and a peanut butter rice cereal mixture, and a melted chocolate combination that just makes these treats feel complete. Every bite will have you swooning for this delicious simple brownie dessert.
Brownie Goody Bar Ingredients
-Brownie mix: You will need 1 box of Betty Crockers Original Supreme Premium brownie mix (this box is about 1 lb and 2.4 ounces in size).
-Water, Oil, Egg: Use the requested water, vegetable oil, and egg from the box of brownie mix.
-Vanilla frosting: You will also need 1 cup of vanilla frosting from a storebought container. I like to use Betty Crocker’s Rich and Creamy Vanilla.
-Peanuts: Adding 1/2 cup of coarsely chopped salted peanuts will help to make your goody bars extra flavorful and give them a nice contrast to the sweetness.
-Rice cereal: You will need 2 cups of crispy rice cereal.
-Peanut butter: 2/3 cups of creamy peanut butter or chunky peanut butter will work great for adding a savory flavor to this recipe.
-Chocolate chips: You will need an 8-ounce bag of semisweet chocolate chips this is about 1 1/3 cups.
How to make Brownie Goody Bars
Preheat your oven to 350 degrees F and grease the bottom of a square 9-inch baking pan with cooking spray or grease well with shortening. Lining the pan with foil and then greasing the foil will help to make cutting and removal easier later if desired.
Make and bake the brownies as directed on the box in your prepared square pan. Let them cool completely. I placed mine into the freezer for faster cooling.
Frost the brownies with the vanilla frosting and then sprinkle the top with the chopped peanuts. Place the brownies into the fridge to chill while you prepare the cereal mixture.
Measure the cereal into a medium sized bowl; set aside.
In 1-quart saucepan, melt the peanut butter and the chocolate chips over low heat, stirring constantly.
Pour the mix over the cereal in the bowl, stirring until evenly coated.
Spread it over the frosted brownies. I found that making small, short strokes with a rubber spatula made it easier to spread the mixture.
Refrigerate for 1 hour or until the chocolate is set before cutting. For bars, cut into 4 rows by 4 rows. Store tightly covered at room temperature or in the refrigerator.
BETTY CROCKER RECIPE: BROWNIE GOODY BARS
Ingredients
- 18 oz brownie mix
- 3 TBSP Water
- ½ cup vegetable oil
- 2 eggs
- 1 cup vanilla frosting from 16 oz container
- ½ cup salted peanuts coarsely chopped
- 2 cups crispy rice cereal
- ⅔ cup peanut butter creamy
- 8 oz semisweet chocolate chips 1 1/3 cups
Instructions
- Heat oven to 350°F (325°F for dark or nonstick pan). Grease bottom only of 9-inch square pan with cooking spray or shortening. (For easier cutting, line pan with foil, then grease foil on bottom only of pan.)
- Make and bake brownies as directed on box. Cool completely.
- Spread brownies with frosting. Sprinkle with peanuts; refrigerate while making cereal mixture.
- Measure cereal into medium bowl; set aside.
- Microwave peanut butter and chocolate chips for 1 min 30 seconds. Add additional time in 20 second intervals until chocolate has melted and mixture can be easily stirred together. Pour over cereal in bowl, stirring until evenly coated. Spread over frosted brownies. I found making small, short strokes with a rubber spatula made it easier to spread the mixture.
- Refrigerate 1 hour or until set before cutting. For bars, cut into 6 rows by 4 columns. Store tightly covered at room temperature or in refrigerator.

What Are Some Other Ways I Can Modify These Brownies?
A few simple ways to change these brownies up and make them even better (like that’s possible) are to switch out the rice cereal for a chocolate rice cereal variety and use a white chocolate chip instead of the semisweet.
Another idea is to use Nutella instead of peanut butter and chopped hazelnuts instead of peanuts.
Lastly, after the brownies are done, throw some mini marshmallows on them and put them back into the oven until melted. Spread them around while soft and then follow through with the recipe as directed.
Can I Make These Dairy Free?
By using a nondairy semisweet chocolate chip (like Enjoylife brand) and using dairy free frostings and brownie mix you can have this dish be dairy free. You may have to switch brands, but its a super easy switch that gives you dairy free results, and doesn’t require real effort to do so.
What If I Have a Nut Allergy?
You can modify these crispy brownies to fit your allergy by using a non-nut butter of choice and omitting the chopped nuts. I’ve read that mixing butterscotch chips in with the chocolate chips helped to give it a nuttier flavor without the actual nuts! Of course, make sure you double check other ingredients for cross contamination warnings just to be safe, but you already know that.
