Oatmeal Cookie Brownie Bars made completely from scratch with three different layers. There is an oatmeal crust, a brownie layer and a simple chocolate frosting on top!
I really love brownies. Plain brownies (served warm, with a little scoop of vanilla ice cream) are probably one of my favorite desserts ever. This new version with an oatmeal layer on the bottom and frosting on the top really takes a classic brownie recipe up a few levels!
OATMEAL COOKIE BROWNIE BARS
This delicious brownie recipe begins with an oatmeal cookie layer. Sweetened completely with brown sugar and made with lots of butter, this crust has a bit of a caramel flavor to it, which goes so well with the brownies. The brownie layer is made completely from scratch and poured over the oatmeal cookie layer before being baked. Once the brownie bars are cooled, a simple homemade chocolate frosting is spread over the top. Perfect dessert recipe!
Ingredients in Oatmeal Cookie Brownie Bars
OATMEAL COOKIE CRUST:
Flour – You will need 2/3 cup all-purpose flour for the oatmeal cookie crust layer.
Baking soda – Use 1/2 teaspoon for the leavening agent in the brownies. Make sure your baking soda isn’t old or expired for maximum results.
Brown sugar – A cup of brown sugar provides the sweetness for the cookie layer. For best results, make sure your brown sugar isn’t dry or stale.
Quick oats – Quick oats work the best in this layer, but you can use old-fashioned oats if you prefer. This will result in a much chewier cookie crust, but will still be delicious!
Butter – You will need 2/3 cup of melted butter to provide the liquid for the cookie layer.
BROWNIE LAYER:
Butter – For the brownie layer, you need one stick of butter. Make sure the butter is softened to room temperature, not melted.
Sugar – One and half cups of sugar provide the sweetness for the brownie layer.
Eggs – 2 large eggs will bind everything together and help to provide the soft, chewy texture for the brownies.
Vanilla extract – We need 2 teaspoons of vanilla extract to help get a good flavor base for these brownies. The higher the quality of the vanilla, the better!
Flour – You will need 1 1/2 cups all-purpose flour for the base of this brownie recipe.
Salt– This is the flavor enhancer and it works to make everything else taste great! You need 1/4 teaspoon of salt to do this.
Baking soda – Use 1/4 teaspoon for the leavening agent in the brownies. Make sure your baking soda isn’t old or expired for best results.
Cocoa – Just 4 tablespoons of unsweetened cocoa powder makes the brownies so rich and fudgy.
CHOCOLATE FROSTING:
Semi-sweet chocolate chips – The chocolate chips provide the chocolate in the frosting.
Milk – Milk will thin out the frosting to spreading consistency. Feel free to add a little more or a little less to get the frosting as thin or as thick as you prefer.
Butter – A half stick of butter makes the frosting so yummy. For best results, use real butter.
Powdered sugar – 2 cups of powdered sugar will make the frosting perfectly smooth and sweet.
Vanilla – A teaspoon of vanilla extract adds a little extra flavor. The higher the quality of vanilla, the better.
HOW TO MAKE OATMEAL COOKIE BROWNIE BARS
Preheat oven to 350°.
To make the oatmeal cookie layer, mix the flour, baking soda, brown sugar and oats together in a large bowl. Pour the melted butter over the mixture and mix until well combined.
Press into a greased 9X13 pan.
For the brownie layer, cream butter, sugar, eggs and vanilla together for 2-3 minutes in a large bowl.
In a separate bowl, combine the flour, salt, baking soda, and cocoa powder. Add to the creamed mixture and mix just until combined. Pour the brownie batter over the oatmeal crust.
Bake for 30-35 minutes or until toothpick inserted in the middle comes out clean. Cool and then make the frosting.
To make the frosting:
In a microwaveable bowl, melt chocolate chips, milk and butter. Microwave in 30 second intervals, stirring between each interval until completely melted and smooth.
Add the powdered sugar and vanilla and mix until smooth. Spread over the cooled brownies.

- It is an easy recipe. It may seem like there are a lot of steps and ingredients, but all of the ingredients are basic and each step is very simple. It just seems a little complicated because there are three different layers to make. This makes it great for anyone to make, no matter their level of baking skills.

Caramel and oatmeal and chocolate all together is amazing. Each layer has a different consistency, but when they are all put together, it really is incredible.
SHOULD I EAT THESE BROWNIES WHEN THEY ARE WARM OR COLD?
You can serve them up either way! Personally, we LOVE it when our brownies are still a little warm because they are perfect when they are fresh from the oven. Just make sure they have cooled a little bit before you frost them. But you will love them just as much when they have cooled down to room temperature too. There is no wrong time to serve this amazing dessert!
HOW LONG ARE OATMEAL COOKIE BROWNIE BARS GOOD FOR?
These brownies can be kept stored in an airtight container or a well-covered pan for up to 3-5 days at room temperature. Keeping them in a tightly sealed container will help to keep them to stay soft and chewy.
