No Bake S’mores Bars are made with Golden Grahams, melted chocolate and marshmallows. This delicious no bake dessert recipe comes together in just a few minutes and tastes just like s’mores, without the mess or the campfire!
What are No Bake S’mores Bars?
No Bake S’mores Bars are kind of like Rice Krispie Treats, but you use Golden Grahams cereal as the base for the recipe. Melting milk chocolate chips and marshmallows together provides a wonderful coating for the cereal that tastes just like s’mores.
How long does it take to make No Bake S’mores Bars?
This dessert is so easy to make and only takes about 5 minutes of prep time! No baking is necessary – just let the bars sit for about an hour and then they are ready to cut up, serve and eat! You can eat them immediately after mixing everything together, but you may have to use a spoon!
Ingredients in No Bake S’mores Bars
Golden Grahams cereal – You’ll need 8 cups of cereal. You can also use another brand of toasted graham cereal – Honey Grahams, Honey Graham Toasters, etc.
Miniature marshmallows – You will need 8 cups of mini marshmallows. A 16 oz bag has about 9 cups, so you’ll use most of the bag up. 6 cups of marshmallows are melted into the bars and the other 2 cups are mixed in at the end.
Milk chocolate chips – You will need 1 1/2 cups of milk chocolate chips. You could also use 12 ounces of Hershey bars or another type of milk chocolate.
Light corn syrup – 1/4 cup of light corn syrup helps the bars to stick together and set up properly.
Butter – Butter makes everything better, right? In this dessert, the butter helps to thin out the marshmallows. For best results, use real butter!
Vanilla extract – Yep, a whole tablespoon of vanilla extract. I love using vanilla bean paste in recipes, but you can use regular vanilla. The higher the quality of vanilla, the better.
How to make No Bake S’mores Bars
Butter a 9X13 pan. You can use non-stick spray as well, but I like to use real butter when I make no bake treats. My favorite way to butter a pan is to place my hand in a plastic sandwich bag (like a glove) and put a little bit of butter on the edge where my fingertips are. Spread the butter around the bottom and up the sides of the pan until evenly coated.
Measure the cereal out and place it in a large bowl. In a medium saucepan, heat 6 cups of marshmallows, the chocolate chips, corn syrup and butter over low heat, stirring occasionally until melted. Remove from heat and stir in the vanilla extract.
Add the melted chocolate mixture to the cereal and mix until evenly coated. Let the mixture sit for a minute or two to cool a bit and then stir in the remaining marshmallows. Press the mixture into the prepared pan. Let sit for at least an hour before cutting into bars and serving. Store at room temperature.

How to make the best No Bake S’mores Bars
Over the years, we have learned a lot of tips to help when making no bake treats with marshmallows. These tips work for all variations of Rice Krispie treats and these No Bake S’mores Bars too!
-Make sure to not use stale marshmallows. Seriously. Recently purchased marshmallows work best.
-Watch that you don’t overcook. You want to heat the chocolate and marshmallow mixture over low heat just until it is completely melted.
-Always remember the butter. The marshmallow-butter combination helps keep the treats soft and chewy, so don’t leave it out or reduce the measurement.
-Don’t chill in the refrigerator. Even if you want them to set quickly, I find this just dries the marshmallow treats out more quickly.
-Store in an airtight container on the counter top.
HOW LONG ARE NO BAKE S’MORES BARS GOOD FOR?
These tasty little treats can last about a week or so in an airtight container a room temperature. That said I doubt they’ll last that long. With every bite you won’t help but fall deeper in love. Yum!
WHAT TYPE OF CHOCOLATE SHOULD I USE?
You can use any type of chocolate chip that you prefer. Milk chocolate will be more s’more-like in flavor as you’re more likely to use Hershey bars when making the real deal campfire s’mores, but semi-sweet chocolate chips work great too and add in a nice flavor contrast as well. You can try it both ways and see which one you prefer.

I’m not supposed to eat chocolate. I have a caffeine issue. However, white chocolate doesn’t have caffeine. I don’t like it nearly as much but I’m thinking I’ll try these using that or maybe some other flavor chips. Peanut butter maybe? I’ll let you know.

Can this be made without the corn syrup? Seems like it’s a pretty standard recipe like rice crispy treats and no corn syrup is used. What is the reason for the corn syrup if there is butter and marshmallows?

It probably could be made without corn syrup though I haven’t tried. The corn syrup acts as a binder and helps with the overall consistency and texture of the bars.
