S’mores Krispie Treats
I found this fun recipe in my decade-old recipe file folder and have had it flagged for months now. It seemed like it would be a tasty combination of s’mores and rice krispie treats and I knew my kids would love it. I whipped up a batch for our family dinner and I am hoping some of the treats last until dessert. They are SO good! I just love the crunchy graham cracker base with the chewy rice krispies and chocolate and peanut butter topping. Of course adding sprinkles helps to make them more fun and delicious.

Layered S’mores Krispies Ingredients
Graham crackers: For the crust of this treat, you will need 7 whole graham crackers.
Mini marshmallows: Using 3 ½ cups of miniature marshmallows will give this treat the perfect amount of ooey-gooey goodness.
Chocolate chips: Add in 1 package (12 oz., 2 cups) of semi-sweet chocolate morsels for an amazing smooth chocolatey taste.
Corn syrup: You need ⅔ cup of light corn syrup to help create the great taste and texture of this dessert.
Butter: Adding in 3 tablespoons of butter will give these dessert bars wonderful flavor and shine.
Peanut butter: Use ½ cup of peanut butter for an extra bit of amazing taste.
Rice krispies: For the lovely crispy crunch, you will need to use 3 cups of krispie cereal.
DIRECTIONS
Crust
Begin by coating a 13 x 9 x 2-inch microwave-safe dish with cooking spray. Then, arrange the graham crackers in a single layer in the dish, breaking crackers as needed to fit. Proceed to sprinkle the marshmallows evenly over crackers.
Place the baking dish in the microwave and heat on HIGH for 1 minute or until marshmallows are puffy. Be careful to not over cook. When done, remove the dish from microwave and stick it in the freezer to cool.
Krispie mixture
Next, in 2-quart microwave-safe mixing bowl combine the chocolate morsels, corn syrup and butter. Then microwave these ingredients on HIGH for about 1 ½ minutes or until the chocolate is melted, stirring every 30 seconds. After the chocolate is fully melted, stir in the peanut butter, then add in the krispies cereal, mixing until well combined.
Assemble
Take the baking dish from the freezer and continue to spread the rice krispie mixture evenly over marshmallows, press down carefully with a spatula. If desired, shake some sprinkles on top, for fun! Cover and refrigerate about 1 hour or until firm.
Once set, cut into squares, serve and enjoy!

It was fun meeting you as well Erin! And if your kids are anything like mine, yes, they’ll go crazy over these! But then again so did our 90-year old grandmother, ha! It must be the sprinkles. 🙂

My daughter loves s’mores and rice crispy treats, but unfortunately is allergic to peanuts. Maybe I can adapt this for her.

I’m sure it’d be fantastic with another type of butter- almond or cashew for example!
