If you know me at all, you know that cookie dough is one of my favorite foods. But I really like brownies too. I’ve spent years trying to decide which one is actually my favorite dessert, and now I don’t really have to choose when I decide to splurge on a treat. This dessert combines my two favorites in one amazing dessert. And it’s every bit as good as it sounds!
What are Chocolate Chip Cookie Dough Brownies?
Chocolate Chip Cookie Dough Brownies. The brownie layer on the bottom is really good. I feel like I have tried many brownie recipes and usually think that a box mix is actually better. You can use a box mix if you want, but this homemade version is actually really good! The cookie dough layer is pretty basic, but is the perfect consistency for this dessert – there are no eggs in it, so I don’t think you can actually make cookies with it, but it tastes amazing as cookie dough! To keep the cookie dough contained a little bit, there is a simple chocolate layer on top – pretty much just melted chocolate chips with a tiny bit of shortening to thin it out a little bit.
Ingredients in Chocolate Chip Cookie Dough Brownies
Brownie Layer:
Sugar – Brownies aren’t brownies without sugar. Regular granulated sugar provides the perfect amount of sweetness for the brownie layer.
Flour – Regular all-purpose flour works great! You can definitely use a gluten-free substitute if you prefer.
Cocoa powder – Unsweetened cocoa powder provides that rich, chocolate flavor that we need in brownies!
Salt- This is the flavor enhancer and it works to make everything else taste great! We need 1/2 teaspoon of salt to do this.
Oil – Brownies need some fat and oil works well. You can use vegetable oil or canola oil, but I often use coconut oil in baked goods and it works wonderfully too! Just make sure the coconut oil is fully melted before mixing into the batter.
Eggs – Four eggs will work as the binder and a leavening agent for these brownies keeping them nice and fudgy/thick.
Vanilla – We need 2 teaspoons of vanilla extract to help get a good flavor base for these brownies. The higher the quality of the vanilla, the better!
Cookie Dough Filling:
Butter – Use real butter for best results and make sure it is softened to room temperature before mixing with the sugars.
Sugar – Can’t leave this one out – kind of an important ingredient in cookies!
Brown sugar – Also an important chocolate chip cookie dough ingredient. Make sure your brown sugar isn’t dried out or stale.
Milk – Just a little bit of milk, but it is needed to add a bit of moisture to the cookie dough. Any type of milk will work just fine!
Vanilla – I suggest using a good quality vanilla extract or a Vanilla Bean Paste.
Flour: I usually use all purpose flour, but you can use bread flour, or even pastry flour in this recipe. You can also use a gluten-free flour as a substitute. If you use a gluten-based flour, make sure you cook it for safety before adding to recipe (directions below).
Chocolate Chips: You’ll need 1-2 cups semi sweet chocolate chips for the cookie dough layer
Chocolate Glaze:
Chocolate chips – All you need is a cup of semi-sweet chocolate chips to make the simple chocolate layer that goes on top.
Shortening – You just need a tablespoon of shortening to mix in the with the chocolate before melting to thin it out just enough to make it easy to spread on top of the cookie dough.
How to make Chocolate Chip Cookie Dough Brownies
Preheat the oven to 350°. To make the brownie layer, combine sugar, flour, cocoa and salt. Add oil, eggs and vanilla. Beat for about 3 minutes. Pour batter into a greased 9X13 pan for 25-30 minutes. Cool completely before adding the cookie dough layer on top.
To make the cookie dough layer, you’ll need to heat the flour first so that it is safe to consume raw. This is easy to do! Just spread the flour out on a cookie sheet and bake at 350° for 5 minutes. Let it cool while you start to mix up the cookie dough batter.
Beat the butter and sugars together for 2-3 minutes and then add the milk and vanilla. Beat for another minute and then mix in the flour and chocolate chips until the dough is well mixed. Spread the cookie dough evenly over the cooled brownies.
For the top chocolate layer, put the chocolate chips and shortening in a glass bowl. Microwave for 30 seconds, stir and then microwave for another 30 seconds. Stir until completely melted and smooth and then spread evenly over the cookie dough layer.

Ingredients

- 4 eggs
- 2 tsp vanilla
Cookie Dough Layer:
- 1 cup butter softened to room temperature
- 1 cup brown sugar
- ½ cup sugar
- ¼ cup milk
- 2 tsp vanilla
- 2 cups flour cooked for safety before adding to recipe
- 1 ½ cups semi sweet chocolate chips
Chocolate Glaze:
- 1 cup chocolate chips semi-sweet
- 1 Tbsp shortening
Instructions
Brownie Bottom Layer

How to heat flour for edible cookie dough
Raw flour isn’t necessarily safe to eat without heating it first. It’s super easy to do. Just spread flour on a baking sheet and bake at 350° for 5 minutes.
CAN YOU FREEZE COOKIE DOUGH BROWNIES?
These brownies can be frozen! Before freezing, I recommend slicing them into serving sized squares and flash freezing for 2 hours on a baking sheet until solid. Then individually wrap them up in plastic wrap before storing in an airtight container. Then, when you want to eat a sweet chocolaty treat, all you have to do is remove a piece of brownie from the freezer and let it thaw for an hour or so on the counter until soft.
How to soften butter for cookie dough
Make sure you use softened butter, but don’t melt it! If you have time, just leave butter out on the counter for about 1-2 hours before making your cookies. If you are like me and don’t plan your cookie cravings that far in advance, just place the butter in your microwave and soften in 5 second intervals, being very careful to pull it out before it melts. I actually like to use the defrost setting on my microwave to soften butter- I don’t know the technical reasons behind it, but it seems to soften the butter more evenly and takes a little bit longer so I’m less likely to start melting it! A lot of newer microwaves have a “soften butter” option you can use – I have to run mine through twice, but then the butter is perfect every time!

Love the recipe – but it’s REALLY hard to follow. All other sites give the same rundown of ingredients and instructions at the top like you have – then numbered steps for procedure again in the actual recipe under the ingredient quantities. That way we can print off just the recipe itself.
BTW – you forgot to add the chocolate chips to the cookie dough in the instructions. Oops!!! 🙃
