Mint frosting ingredients
- 3 TBSP butter, melted
- 2 TBSP milk
- 1 1/2 cups powdered sugar
- 1/2 tsp mint extract
- 2-3 drops green food coloring
Easy Chocolate Frosting ingredients:
- 3 TBSP butter
- 1/4 cup chocolate chips
- 2 TBSP milk
- 1 cup powdered sugar
To make our Homemade Brownie Recipe:
Preheat oven to 350 degrees. Line an 8×8 pan with parchment paper and set aside.
Whisk together sugar and butter. Add eggs, vanilla, cocoa powder and milk and whisk until smooth.
Stir in flour, salt and mini chocolate chips, stirring until flour is well incorporated.
Bake for 30 minutes, until brownies are set. Remove from oven and let cool for 20 minutes before frosting.
To make Mint frosting: Combine all ingredients. Whisk until smooth. Pour over warm brownies. Gently spread frosting over the entire surface of brownies. Chill in the refrigerator for 30 minutes before topping with the chocolate frosting.
To make Chocolate frosting: Combine butter, chocolate chips and milk in a bowl. Microwave for 45 seconds. Add powdered sugar and whisk until smooth. Pour frosting over cooled brownies, on top of the mint frosting. Let fully cool to set.

Can you freeze brownies?
Yes, you can freeze brownies! Be sure to cool them completely, then you’re welcome to freeze either the entire square of brownies, or cut into 12 servings and freeze them individually. Brownies can stay fresh in the freezer for 2-3 months. Wrap them in parchment paper then store them in a large ziplock freezer bag for best results. Another alternative is to bake the brownies in a foil pan. Once cooled, you can frost the brownies, let them cool again to set the frosting, then just cover the foil pan securely and place in the freezer.

I made this recipe but due to health issues I made it gluten free and keto. It turned out great! I think it could have been cooked like 2-5 minutes less that the recipe instructions say but my oven is kinda on the hot side. Really good! Used gluten free flour and Swerve sugars as well as no sugar mini chocolate chips! I will definitely make again!

My 7 year old daughter and I made these. She was certain that they would be good because they were “5 star”. She just tasted them and said, ” Delicious, definitely 5 star!!” These are incredibly decadent. We added some green and white sprinkles to the top with a circle of yellow sprinkles to represent the pot of gold for St. Patty’s day! We also made them gluten-free by substituting King Arthur GF flour for the all-purpose flour and had great results. This is a great one to make with kids because there is a lot of measuring and stirring and lots of steps to help out on.! One thing I wasn’t completely sure about was if there was a difference between peppermint and mint extract. We had peppermint on hand so that is what we used but I was curious if there was a difference. Thanks for this recipe, I will definitely make these again.
