Cheesecake Brownies with a Brownie Mix
I made these Raspberry Cheesecake Brownies with a boxed brownie mix, but you’re also welcome to use the homemade brownie recipe I provide, or use your favorite brownie recipe! Adding just 4 ingredients to your boxed mix brownie batter really elevates the recipe from basic to outstanding.
I know I’m not the only one out there who likes to get a little fancy sometimes. I mean, most days I am 100% comfort over fashion but every once in a blue moon it is just good for the soul to mix things up a bit!
I feel the same way about chocolate. I love chocolate, like REALLY love it. (i.e. sneaking chocolate chips out of the cupboard when no one is looking..) Sometimes though, life just calls for FANCY!
The best news? These are crazy easy and are in the oven within minutes! I’d suggest using that extra time to do some jumping jacks, because is your like me, you’ll want to eat the entire pan yourself!
How to make Raspberry Cheesecake Brownies
For this recipe I use a boxed brownie mix and canned raspberry pie filling. If you’d rather use your favorite homemade brownie mix, go for it! I’ll include one of my favorites below.
You could definitely use raspberry jam instead of the raspberry pie filling, too.
First, follow the directions on the back of your brownie mix. Mine called for a few tablespoons of water, some oil and a couple of eggs.
Pour the brownie batter into a greased 9×13 pan. Spread the batter around evenly.
In a clean bowl, mix together room temperature cream cheese, sugar and vanilla. Mix until creamy and no longer lumpy.
Spoon dollops of the cream cheese mixture onto the brownie batter.
Next, spoon some raspberry pie filling in between the dollops of cheesecake mixture. Then use a skewer or butter knife to swirl the layers together until you achieve a marbled look.
Bake at 350° for 25-30 minutes or until a toothpick comes out clean.
Let cool completely before slicing.

Raspberry Cheesecake Brownies are a rich and decedent treat that everyone will love. Made with either a boxed mix or a from scratch brownie, the addition of raspberry pie filling and cheesecake swirl take these brownies up a notch!
Raspberry Cheesecake Brownie Ingredients
- 1 box brownie mix mixed according to directions on box
- 8 oz cream cheese room temperature
- 1/4 cup granulated sugar
- 1 tsp vanilla
- 1 cup raspberry pie filling
Directions to make brownie recipe
- Preheat oven to 350°. Grease a 9×13 pan. Set aside.
- Make brownie batter according to the directions on the box.
- Pour and spread the brownie batter into the greased 9×13 pan. Set aside.
- In a clean bowl, mix together the cream cheese, granulated sugar and vanilla. Mix until completely smooth and no longer lumpy.
- Spoon dollops of the cream cheese mixture on top of the brownie batter in the 9×13 pan.
- Spoon dollops of the raspberry pie filling onto the brownie batter, next to the cream cheese mixture.
- Use a long skewer or something similar to swirl the layers together until the brownies take on a marbled look.
- Bake at 350° for 25 minutes or until a toothpick comes out clean.
- Let cool completely before cutting.
Homemade Brownie Recipe
Ingredients:
- 1 1/2 sticks (3/4 cup) butter
- 4 ounces unsweetened baking chocolate
- 2 cups sugar
- 3 eggs
- 1 1/2 cups flour
- 1/4 teaspoon salt
How to make Homemade Brownies:
- Preheat the oven to 350F. Microwave the butter and chocolate together in a microwave safe bowl for 2 minutes on high.
- Remove from the microwave and stir until the chocolate is melted and has blended well with the butter.
- Add 2 cups of sugar and the eggs to the heated chocolate mixture. Stir until well combined.
- Then stir in the flour and salt.
- Bake at 350° for 25 minutes.

Can you freeze brownies?
Yes you can freeze brownies for up to 3-4 months. There are several ways you can freeze them. Just remember, the better you package them before freezing, the longer they last! If you simply want a quick option, you can freeze individually cut brownies in small sandwich bags or in a large ziplock bag. Brownies frozen in baggies like this should generally be eaten within a month. For longer freezes, you’ll want to double package brownies. I like to first wrap the brownies in foil, making sure you fold over so that no part of any brownie is left exposed to air. Then take the foil package and either wrap it again in foil, or place it in a ziplock freezer bag. Brownies frozen with a double wrapping will last 3-4 months, especially if you freeze them in a deep freeze.
Can brownies be left out?
Yes, you can leave brownies out on the countertop. Make sure they’re kept in an airtight container and they’ll stay fresh for several days. If you want them to last several days longer, you can store them in the fridge.

You could – it could make the brownies a little dry and harder to swirl the raspberries around but I'm sure if you placed them all over it should be fine.

Yes, they will need to be stored in the refrigerator. Expect them to stick to each other if you are storing them on top of each other. It may be beneficial to add a layer of parchment paper in between the layers of brownies. Enjoy!!

As a professional portrait photographer, Jessica you need a better family portrait and portrait of yourself.
