Who else loves chocolate? I have so many favorite chocolate recipes, but there is just something about brownies. There really aren’t many desserts better than a thick, fudgy brownie served with a scoop of vanilla ice cream. Am I right? The only thing that makes brownies better is adding something delicious to them. Like Cadbury mini eggs.
Cadbury Mini Eggs arriving at my local supermarkets is one of my favorite things about this time of year. Add them to this delicious brownie recipe and enjoy!
INGREDIENTS IN CADBURY MINI EGG BROWNIES
BUTTER – Half a cup of unsalted butter is needed to make the brownies. The butter is melted with the semi-sweet chocolate to form the base of the brownie batter. Make sure to let the butter cool before adding to the recipe.
COCOA POWDER – Unsweetened cocoa powder provides the rich, chocolatey flavor in these brownies.
SUGAR – You can’t make brownies without sugar!
EGGS – Two eggs are added to the batter to help bind everything together.
VANILLA – A teaspoon of vanilla extract is used to enhance the chocolate flavor of the brownies. The higher the quality of the vanilla, the better.
SALT – A half teaspoon of salt is added to the batter to balance the sweetness and enhance the chocolate flavor.
FLOUR – Flour is added to the batter to provide structure and texture to the brownies. All-purpose flour works best, but you can use a gluten-free substitute if you prefer.
BAKING POWDER – Baking powder is the leavening agent in the brownies. For best results, make sure the baking powder isn’t expired.
CADBURY MINI EGGS – Chop up some Cadbury Mini Eggs and mix half of them in the brownie batter. Sprinkle the other half on top of the brownies before baking them. I usually crush the mini eggs with a meat mallet after placing them in a ziplock bag.
HOW TO MAKE CADBURY MINI EGG BROWNIES
Preheat the oven to 350°. Lightly grease the bottom of a baking pan and line it with parchment paper. Set it aside.
In a microwave-safe bowl, melt the butter and then allow it to cool for a few minutes. Then add in the cocoa powder and sugar. Whisk until combined. Add the eggs, vanilla extract, and salt and mix until the eggs are just incorporated.
Slowly add in the flour and baking powder, mixing until thoroughly combined. Fold in half of the chopped Cadbury mini eggs.
Pour the batter into the prepared baking pan and spread it out evenly. Sprinkle the remaining chopped Cadbury mini eggs on top.
Transfer the baking pan to the oven and bake for 20-25 minutes, or until a toothpick inserted in the center comes out mostly clean.
Allow the brownies to completely cool in the pan before cutting them into squares and serving.

- ¾ cup chopped Cadbury Mini Eggs divided

HOW TO STORE BROWNIES
Store leftover baked brownies in an airtight container on the counter for up to 3 days.
Freeze leftovers by slicing them into squares and stacking them in a freezer-safe airtight container or bag with parchment paper between each slice for up to 3 months.
BEST PAN FOR BAKING BROWNIES
I’ve baked a lot of brownies and the pan you use matters! I like to use a heavier, more durable pan made from stainless steel, glass, or ceramic. I like to use one that has handles for easy oven transfers. If you opt for non-stick, make sure you use a high quality non-stick like ceramic pans as they hold up better over the years. Heavier pans will bake brownies at a more even temperature, although don’t worry, the sides will still get a bit chewier than the rest! Who else likes brownie corners as much as I do?! (Did you know there’s even a pan for baking ALL corner brownies?!)

Hi, just a typo note… 2nd line / sentence of first step of directions. You say to add (butter, eggs & flour) instead of butter, eggs and vanilla.
Otherwise, the recipe sounds delicious!!!
