Cadbury Mini Eggs are a favorite candy for many, and using them in both the batter and the frosting for these chocolate brownie bites creates the perfect dessert!
Cadbury Mini Eggs arriving at my local supermarkets is one of my favorite things about this time of year. I decided to invent a recipe that incorporates a lot of these little treats and the results are amazing!
First, you blend some of the little eggs to put into the batter, and then you fold in some more of them, and then finally the frosting is made by melting more Cadbury Mini Eggs and spreading them on top! If you wanted to save yourself a few steps, you could also just make your normal brownies (from a mix or your own recipe) and simply skip to the part where you melt some of the Cadbury Mini Eggs in with the chocolate chips…it really does make an incredible frosting!
CADBURY MINI EGGS BROWNIE BARS
- 1/2 cup semi-sweet chocolate chips
- 2 (10 oz) pkgs Cadbury Mini Eggs, divided
- 1/2 cup sugar
- 1/2 cup butter, softened
- 2 large eggs
- 1 tsp vanilla
- 1/2 cup flour
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1 cup milk chocolate chips
- In a blender, blend semi-sweet chocolate chips, sugar and 1/2 cup Cadbury Mini Eggs into a fine powder.
- Put the powder in a large mixing bowl and add butter, eggs and vanilla. Mix until well combined and then add flour, baking powder and salt.
- Crush 3/4 cups of Cadbury Mini Eggs into small pieces (I used a meat mallet!) and then fold the crushed candy pieces into the batter. Pour the batter into a greased 8-inch pan and bake at 350 for 33-38 minutes.
- Right before the brownies are done, place the remaining Cadbury Mini Eggs (about 1 cup) in a glass bowl with the milk chocolate chips. Melt in the microwave at 30-second intervals, mixing in between until the chocolate chips are completely melted. Use the back of the spoon to break down the Cadbury Mini Eggs.
- Once the chocolate is melted and smooth, spread the mixture on top of the brownies once they come out of the oven. Enjoy!

Hi, just a typo note… 2nd line / sentence of first step of directions. You say to add (butter, eggs & flour) instead of butter, eggs and vanilla.
Otherwise, the recipe sounds delicious!!!
