Snowman Brownie Bites are a delightful treat perfect for the holiday season. This fun and festive easy dessert recipe combines rich brownies and juicy cherries, with playful snowman decorations, making them a hit at any gathering!
Prep: Bake the brownies in a 9x13 baking dish, according to package directions. Allow them to cool completely before proceeding with the rest of the recipe. When ready to proceed, place a piece of parchment paper over a baking sheet and set it aside.
Assemble the centers: Trim off the edges of the cooked brownies, we won't be using the hard crusts. Slice the remaining brownies into 18 squares.
Place one brownie square into the palm of your hand, then place a maraschino cherry in the middle and mold the brownie around the cherry. Roll the brownie and cherry into a ball. Place the brownie ball onto the parchment paper lined baking sheet, continue to repeat until all 18 brownie pieces have been rolled. Chill the brownies in the fridge for 15-20 minutes to help it harden and set.
Melt chocolate: In a medium size bowl, microwave the almond bark in 30 second intervals, until smooth and melted. Use 2 forks to dip and roll the chilled brownie balls into the melted almond bark, and then place them back onto the parchment paper lined baking sheet. Continue until all brownies have been coated in chocolate.
Decorate: Cut your gumdrops in half so that they look like ear muffs when placed on either side of the snowman head. Place all of the halved gumdrops onto the snowmen.
Use the cookie icing to pipe a headband between the two earmuffs, and add some eyes, a mouth, and a carrot nose. Serve and enjoy!

These chocolate covered brownie bites will stay fresh for up to 3-5 days if stored in an airtight container at room temperature. Store in the refrigerator for up to 1 week.
