Slow Cooker Italian Beef Sandwiches - Butter With A Side of Bread

I recently got the chance to try out fresh roast beef courtesy of Jones Creek Beef. I have a large family and sometimes pleasing everyone at mealtime is challenging. Thankfully everyone enjoys a good roast!

Jones Creek Beef is a leading all-natural, grass-fed beef company that produces and markets premium free range, grass-fed, grass-finished beef.  The manner in which Jones Creek Beef raises and handles their cattle yields tender, flavorful, and nutritious beef. They are local here to Utah but you can find Jones Creek Beef products nation-wide at Walmart.

I have to be honest- I’ve never actually tried Grass-Fed beef before, so I was really curious. You prepare grass-fed beef somewhat differently than you would regular beef simply because it has higher levels of protein and lower amounts of fat. It’s a leaner meat, so I found that low and slow is best- bring on the slow cooker! I also cooked the roasts on a low heat in my dutch oven and it turned out incredible! Instead of going the “normal” slow cooker roast route, I decided to mix it up and try this delicious recipe for Italian Beef Sandwiches. Traditionally, these sandwiches call for sliced roast beef, but I couldn’t resist the long, slow method that yields a super tender, fall-apart roast. The meat was juicy and flavorful and I absolutely loved that it was so lean.

Slow Cooker Italian Beef Sandwiches

  • 2-3 lb chuck roast
  • 1 packet Zesty Italian dressing mix
  • 1 14.5-oz can beef broth
  • 3/4 cup pepperoncini peppers or Giardiniera Mix (Chicago-Style Italian Sandwich Mix)*
  • 1 bell pepper, sliced
  • 6 hoagie rolls
  • 6 slices provolone cheese
  1. Place roast in crockpot. Pour in beef broth and sprinkle packet of Italian dressing mix on top. Add in pepperoncini peppers/ Giardiniera mix (which has a veriety of vegetables) and stir contents around a bit. Cook on low for 9 hours.
  2. Use 2 forks to shred meat. Add in sliced bell peppers. Cook an additional hour.
  3. Slice hoagie rolls in half and toast under the broiler for 2 minutes. Pile on shredded meat with peppers, then top with sliced cheese. Return to broiler for 1 minute to fully melt cheese.  Enjoy!

*I used a little of both! It yields a fantastic flavor. You can find this near the condiments in your grocery store, by the pickles.
