Making homemade ice cream cake with ice cream sandwiches is not only a simple and easy “hack” to making a layered cake but it’s also fun. With this recipe on hand you’re going to have the perfect dessert for birthdays, holidays, summer BBQs, and more! Swap out the ice cream and sandwich flavors for even more variety.
Birthday Ice Cream Sandwich Cake
This ice cream sandwich cake is a layered frozen dessert made in a bread loaf pan but if desired, you could double or triple it to make it fit into a larger pan like a 9×13 baking dish. Covered in chocolate, Funfetti sprinkles, whipped cream, and layered birthday cake ice cream this cake is so gosh darn pretty and tasty too!
Ice Cream Birthday Cake Ingredients
-Ice cream sandwiches: You will need 10 chocolate ice cream sandwiches. We want the rectangular ones to fit in the pan better.
-Ice cream: You will need about ½ gallon of birthday cake or party flavored ice cream. We once used an ice cream called “Play Dough” and the kids WENT CRAZY. So fun!
-Sprinkles: For fun decoration, you will want some cool Funfetti sprinkles otherwise known as Jimmies. Using any festive sprinkles will work but brightly colored or rainbow ones will look awesome in color contrast.
-Whipped cream: You can use whipped heavy cream to top the cake. Scroll down for our recipe for Stabilized Whipped Cream! Optionally you can choose to add 8 ounces of thawed cool whip to your cake. (Have you seen the Cool Whip that can be piped on?!)
-Chocolate syrup: Another optional topping idea is chocolate syrup.
-Maraschino cherries: If desired, you can add as many maraschino cherries to your ice cream cake for garnish.
How to make an Ice Cream Sandwich Cake
Let your ice cream thaw on the counter until it’s soft enough to work with and scoop, but not so soft that it is melting all over the place. I recommend setting it out as you start the cake-making process so it’s easier and doesn’t thaw too much as you continue the steps.
Line a standard-sized bread loaf pan with parchment paper. Let it overhang from the edges by an inch or so. This will help us to lift and remove the cake later.
Unwrap your ice cream sandwiches and place them in the bottom of the pan, width-wise. If your bread pans sides aren’t perfectly straight, you may need to cut a few sandwiches to make them fit in there properly side by side in an even layer.
Place the ice cream on top of the sandwiches and then spread it into an even layer.
Top the ice cream with plenty of fun colored sprinkles. Add till your heart’s content!
Place the other 5 ice cream sandwiches on top of the sprinkle layer, you shouldn’t have to trim these ones.
Top the sandwiches with the rest of the ice cream and add even more sprinkles.
Cover the pan with plastic wrap and place the ice cream cake back into the freezer for 2 hours to set until solid again. Time may vary if your ice cream was melted more than expected.
Using the parchment sling you created, lift the cake out of the pan. Place onto a serving tray.
Top your cake with whipped topping, more sprinkles, a drizzle of chocolate syrup, and cherries, if desired.
Slice, serve & enjoy!
HOW DO YOU MAKE STABILIZED WHIPPED CREAM?
If you want to make whipped cream ahead of time, you can, but you have to stabilize it. To make stabilized whipped cream, you will need the following ingredients:
- 4 ounces of cream cheese (softened to room temperature)
- 1/3 cup powdered sugar
- 1 tsp vanilla
- 1 cup heavy whipping cream
Beat the whipping cream just until soft peaks form.
Add in the cream cheese, powdered sugar and vanilla. Whip on high until mixture is smooth.
Store in the refrigerator until ready to use, up to 3 days.
A little tip for making whipped cream faster: use a metal bowl and place the bowl in the freezer for about 30 minutes before you make the whipped cream. This will significantly decrease the amount of time that you will need to beat the whipped cream – the process will go much faster!
Ice Cream Sandwich Cake
Ingredients
- 10 Ice Cream Sandwiches
- ½ Gallon Ice Cream Birthday Cake flavor
- Sprinkles
- 8 Ounces Whipped Cream optional
- Chocolate Syrup optional
- 4+ Maraschino Cherries optional
Instructions
- Set your ice cream out to thaw as you start the process of making this cake. It will make it easier to spread into layers. You don’t want it to over-thaw, just be easy to scoop.
- Line a standard loaf pan with parchment paper so that the paper over hangs by an inch or so. This will allow you to easily pull the cake out when it’s time to cut it.
- Unwrap half of the ice cream sandwiches and place them in the bottom of the pan, width wise. If you have a slightly tapering loaf pan like I do (I didn’t realize I did until I made this), you may need to trim the bottom layer of ice cream sandwiches. I had to trip about ¼ inch off one end.
- Place half the ice cream on top of the sandwiches and spread evenly.
- Top the ice cream with plenty of sprinkles. There’s no measuring these, just use your heart.
- Place the other 5 ice cream sandwiches on top in the same type of layer as the first sandwiches. You shouldn’t have to trim these.
- Top with the rest of the ice cream and more sprinkles.
- Cover with plastic and place in the freezer for 2 hours or until solid again.
- Using the parchment paper overhang, gently remove the cake from the pan and invert it onto the serving tray.
- Top with the whipped cream, more sprinkles, a drizzle of chocolate syrup, and cherries, if desired. Slice, serve, and enjoy!

Is it okay if my ice cream sandwiches fit tightly together?
Absolutely! You want them to be nice and snug against each other. It’s a far better option than having gaps between them. Keeping them nice and tight means that you can have a much nicer appearance and uniformity in every served slice.
How far in an advance cake I make ice cream cake?
You can make this cake as much as a month in advance. You definitely don’t want to make it too far in advance, because it can get freezer burn if not properly stored and eventually you will miss your bread loaf pan. I recommend making it no more than a week or so in advance at most to keep the results optimal.
