Easy Chicken Fajitas made with peppers, onions and a secret ingredient that takes the flavor over the top. Quick chicken dinner recipe that can be prepped and ready in less than 30 minutes!
My family is busy and I’m always trying to find new simple and delicious weeknight dinner recipes that don’t take very long to prepare. We love chicken and this easy chicken fajita recipe is one that has tons of flavor and comes together very quickly too!
What are Chicken Fajitas?
Chicken Fajitas are typically made with juicy chicken breasts, peppers, onions and lots of seasonings that are cooked and eaten with tortillas. You can add salsa, guacamole and sour cream on top for even more flavor!
What is the secret ingredient in these fajitas?
The key to all of the flavor in these fajitas is the envelope of Lipton Onion Soup mix! I always use this when I make a pot roast, but had never even thought about adding it to other dishes, especially Mexican food! But it adds just the right amount of flavor when mixed in with the other flavors and seasonings in the recipe. So good!
What to serve with Easy Chicken Fajitas?
Often we serve fajitas as a one-dish meal because they are so filling and full of chicken and vegetables. But it’s fun to add some sides too! Fajitas pair perfectly with our favorite Instant Pot Refried Beans or Easy Spanish Rice.
How to slice chicken for fajitas?
You will want to slice the chicken breasts pretty thin so that the chicken can cook through quickly without getting dry. Slice the chicken against the grain (perpendicular to the fibers) – this will make the meat more tender. If you put the chicken in the freezer for about 30 minutes before cutting it up, it will be a little easier to slice.
Ingredients in Easy Chicken Fajitas
Peppers: Red and green peppers are a must in fajitas but you can add other peppers too. Yellow peppers work well and you can even add in some jalapenos or other hot peppers if you like a little more kick to your food!
Onion: I like to use red onions in fajitas, but yellow onions work great too. Whatever you have on hand!
Chicken breasts: I use about 4 large chicken breasts for this recipe. You can use frozen, but just make sure they are mostly thawed before slicing and cooking.
Vegetable oil: Used to cook the chicken and saute the veggies. You can use canola oil or even avocado oil if you prefer – whatever kind of oil you prefer to cook with should work just fine!
Garlic: You’ll need about one garlic clove chopped up or you can cheat like I do and use a teaspoon of minced garlic – I always keep a jar in the fridge to save on time!
Lipton Onion Soup Mix: The secret ingredient in the fajitas! Just one envelope adds so much flavor – trust me!
Water: Just adds a little liquid to create the sauce for the chicken and veggies.
Salsa: Use any kind of salsa you’d like. Store-bought salsa works just wonderfully but you can also make your own – our Blender Salsa recipe is extremely easy to make and is absolutely delicious too!
How to make Chicken Fajitas
Cut chicken breasts into thin, fajita size strips. Strips should be about 1/2″ wide. Make sure to cut against the grain when cutting the chicken.
Heat chicken in 1 Tbsp of vegetable oil over medium heat until cooked through. Chicken should be at 165° in the middle.
Remove chicken from pan and add the other tablespoon of oil and all the remaining ingredients. Cook for about 10 minutes and then add the chicken back to the pan.
Simmer for a few minutes and then serve. Can serve just plain as is, or with corn or flour tortillas. Fills about 12 fajita-sized tortillas. Top with sour cream, guacamole and salsa for even more flavor!

- 1 garlic clove chopped or 1 tsp minced garlic

- 1/2 cup salsa
Instructions
