This delicious baked salsa chicken recipe is made with chicken, salsa, taco seasoning and cheese. The whole recipe can be assembled in just a couple of minutes – my favorite kind of dinner! Salsa chicken can be made in the oven or in a slow cooker – both methods are super easy!
Is Salsa Chicken healthy?
Salsa chicken is a healthy, high protein meal that is low in carbohydrates. The flavor comes from the salsa and taco seasoning which are both low in calories. The cheese on top is the best part delicious, but can be reduced or even left off and the chicken still has a ton of flavor!
Serve the chicken with a side salad for a deliciously healthy meal that is low in carbs and high in nutrients and protein! I love to eat this chicken with guacamole for a perfectly balanced meal that tastes good too!
What kind of salsa is in Salsa Chicken?
Any type of salsa works well in this recipe! I used a jar of Pace Restaurant Style Salsa, but you could use any type of canned or fresh salsa. Salsa verde would be absolutely delicious with this recipe. If you have a favorite homemade salsa recipe, that would work wonderfully too.
What to serve with Salsa Chicken?
Salsa chicken is wonderful with the traditional rice and beans, but can easily be paired with a salad or any vegetable for a low carb meal. I love adding a little bit of guacamole and/or sour cream to the chicken as well – guacamole is always a good idea!
Ingredients in Easy Salsa Chicken
-4 boneless, skinless chicken breasts (either 4 small chicken breasts or 2 larger ones cut in half)
-4 tsp. taco seasoning
-1 cup salsa
-1 cup shredded cheese (cheddar, fiesta blend, etc.)
How to make Salsa Chicken
Oven instructions:
Place the chicken breasts in a lightly greased baking dish (I used a glass 8X8 pan). Sprinkle half of the taco seasoning on top of the chicken breasts and then turn them over and sprinkle the remaining taco seasoning on the other side of the chicken.
Pour the salsa all over the top of the chicken and then bake in the oven at 375° for about 25-30 minutes. The time may vary depending on the size of the chicken breasts. I like to use a meat thermometer to make sure the chicken is done perfectly every time. Chicken should cook to an internal temperature of 165°.
As soon as the chicken is done, sprinkle the cheese on top and put back in the oven for about 2-3 minutes or until cheese is melted. If you want to brown the cheese a little bit, you can broil it for a minute or two. Serve immediately.
Slow cooker instructions:
Salsa chicken can also be made in a slow cooker. Coat the chicken breasts in taco seasoning and place in a slow cooker. Pour the salsa on top and then cook on low for 6-8 hours or on high for about 3-4 hours.
About 20 minutes before serving, sprinkle the cheese on top. If you want to brown the cheese a little bit, you can put the chicken in the oven and broil it for a minute or two.

What type of chicken can be used for salsa chicken?
I prefer to use chicken breasts in this recipe, but you can use chicken thighs or tenderloins instead. You can use fresh or frozen chicken, but if you do use frozen chicken, you will want to at least partially thaw it so that the taco seasoning will stick to the chicken and coat it more effectively.
How can you tell when chicken is cooked?
Chicken is perfectly cooked when it reaches 165° internally. Using a meat thermometer takes all of the guesswork out of the process and ensures that the chicken is cooked to the right temperature every single time. No more wondering if the chicken is overdone or underdone – just stick the thermometer in to check!
For years, I tried to guess and it was always just a matter of luck sometimes as to whether the chicken was completely done or not and I was always so nervous about it being underdone that I often overcooked it which makes for some tough and chewy chicken!
