- Salsa: Use your favorite brand or homemade salsa; it keeps the chicken moist and adds tons of flavor.

Tips & Tricks
Full instructions can be found on the recipe card below, but here are a few helpful tips.
- Add extras. Top with sour cream, avocado slices, or chopped cilantro just before serving.
- Use thin chicken breasts or pound thick ones. This helps ensure even cooking and reduces bake time.
- Try different salsa varieties. Use chunky, mild, spicy, or even mango or corn salsa for a fun flavor twist.
- Shred the chicken. After baking, shred the chicken and mix it with the salsa and cheese for taco or burrito filling.
Storing Instructions
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave or oven until warmed through. You can also freeze baked salsa chicken for up to 2 months. Thaw in the fridge overnight before reheating.

EASY SALSA CHICKEN
Ingredients
- 4 boneless skinless chicken breasts (either 4 small chicken breasts or 2 larger ones cut in half)
- 4 tsp. taco seasoning
- 1 cup salsa
- 1 cup shredded cheese cheddar, fiesta blend, etc.
Instructions
- Place the chicken breasts in a lightly greased baking dish. Sprinkle half of the taco seasoning on top of the chicken breasts and then turn them over and sprinkle the remaining taco seasoning on the other side of the chicken.
- Pour the salsa all over the top of the chicken and then bake in the oven at 375° for about 25-30 minutes. The time may vary depending on the size of the chicken breasts. I like to use a meat thermometer to make sure the chicken is done perfectly every time. Chicken should cook to an internal temperature of 165°.
- As soon as the chicken is done, sprinkle the cheese on top and put back in the oven for about 2-3 minutes or until cheese is melted. If you want to brown the cheese a little bit, you can broil it for a minute or two. Serve immediately.

FAQs
Can I use chicken thighs instead of breasts? Yes! Boneless, skinless chicken thighs work great and add even more flavor. They also tend to stay juicier and are often more budget-friendly.
Is this dish spicy? It depends on your salsa. Choose mild if you want a more kid-friendly version, or go hot for extra heat. You can also add diced jalapeños for even more spice.
Can I make this in a slow cooker? Yes! Place the chicken and salsa in a slow cooker and cook on low for 4-6 hours. Add cheese just before serving. This method is great for hands-off cooking.
Can I prepare this ahead of time? Yes, you can assemble everything in the baking dish and cover it with plastic wrap or foil in the fridge for up to 24 hours. Bake it when ready to serve.
What kind of cheese works best? Shredded cheddar, Monterey Jack, or a Mexican blend all melt beautifully and add great flavor. For extra creaminess, try mixing in a little cream cheese before baking.
