While I tend to purchase a variety of different brands for the various ingredients in this recipe, I’ve always used Hunt’s Diced Tomatoes. They taste great and I can find them everywhere- most of the time, on sale! Hunt’s prepares their tomatoes differently than other brands and you can taste the difference. Tomatoes are vine ripened and are canned within hours of being picked. Their tomatoes are peeled using steam- no chemicals involved. All this helps their canned tomatoes to be sweet, flavorful and ready to be made into dinner!

If you’ve never made a chicken curry recipe for your family before, this is the perfect one to try. It’s a mild curry with enough flavor to keep the dish interesting, but still mellow enough to appeal to kids. It’s a fantastic way to introduce a new cuisine to your family- I know mine loves it.

Coconut Curry Chicken recipe perfect for a busy weeknight meal! Simple, flavorful and healthy chicken dinner for anyone who loves a mild curry.Coconut Curry Chicken

  • 2 TBSP cooking oil
  • 1 ½ tablespoons curry powder
  • 1/2 cup diced sweet onion
  • 2 cloves minced garlic
  • 2-3 boneless, skinless chicken breasts, diced
  • 1 (14 ounce) can coconut milk
  • 1 (14.5 ounce) can stewed, diced tomatoes
  • 3 tablespoons sugar
  • salt and pepper to taste
  1. Heat oil in a large skillet over medium heat.
  2. Add curry, onions, and garlic and mix thoroughly. Cook for 3-4 minutes, stirring occasionally, letting the flavors meld.
  3. Add chicken, tossing lightly to coat. Season chicken with salt & pepper. Reduce heat to medium, and cook for 5 minutes, until chicken is mostly cooked through.
  4. Add coconut milk, tomatoes, and sugar and stir to combine. Heat until lightly bubbling, then reduce heat and simmer for 10 minutes.
  5. Serve chicken over rice. Store leftovers in an airtight container in the fridge.
