What is Egg Casserole?
Cheesy Baked Egg Casserole is made with eggs, cottage cheese, Monterey Jack cheese and cream cheese. Add a few other basic ingredients for a delicious breakfast recipe that is baked in a 9X13 pan. Great for serving a crowd or you can make it for yourself and reheat to have a delicious breakfast all week long!
What to serve with Egg Casserole?
Egg Casserole is a pretty filling breakfast all on it’s own, but I love to pair it with fresh fruit. And bacon. Everything is better with bacon, right?!
Ingredients in Cheesy Baked Egg Casserole
Eggs – Can’t leave these out – they are pretty important in this recipe!
Milk – I usually use 1% because that’s what I have in the fridge, but pretty much any type of milk will work.
Sugar – Just a couple teaspoons of sugar add a subtle sweetness/flavor to the recipe. I have left this out many times and there isn’t a huge difference without it, so it’s totally up to you if you add it in or not!
Cottage cheese – I love adding cottage cheese to recipes because it packs so much protein and cheesy flavor without adding a lot of fat or calories.
Cream cheese – Any variety of cream cheese will work. It mixes into the recipe much more easily if it is cubed and softened first.
Monterey Jack cheese – Shredded Monterey Jack is amazing in this recipe, but you can swap all or part of it out with pretty much any kind of shredded cheese you like or have on hand!
Butter – A little bit of melted butter really helps mix everything together and adds a lot of flavor as well!
Flour – Just a little bit of flour helps everything set up a little better when baked.
Baking powder – Helps give the egg casserole a lighter texture/consistency. Make sure your baking powder isn’t expired for best results.
How to make Cheesy Baked Egg Casserole
Preheat oven to 350°.
In a large bowl, beat together eggs, milk and sugar. Add cheeses and melted butter and mix well. Mix in flour and baking powder and then pour into a 9X13 pan (or other 3 quart casserole dish) that has been greased with non-stick cooking spray.
Bake for 45-50 minutes or until toothpick inserted in the center comes out clean. Slice and serve.

Ingredients
- 7 eggs
- 1 cup milk
- 2 tsp sugar
- 16 oz cottage cheese
- 4 oz cream cheese cubed and softened
- 1 lb Monterey Jack cheese shredded
- 2/3 cup butter melted
- 1/2 cup flour
- 1 tsp baking powder
Instructions
- Preheat oven to 350°.

SIMPLE INGREDIENT SWAPS FOR BREAKFAST CASSEROLE
One of the things I love most about this recipe is how versatile it is. The eggs are kind of a must, but beyond that, you can easily swap things out based on your family’s preferences (and what you have in the fridge)!
–Add some meat: The recipe doesn’t call for meat, but you can easily add diced ham or sausage if you prefer. Or maybe even try a combination of meats – ham, bacon and sausage all taste great together!
–Swap the cheese: The original recipe calls for Monterey Jack, but you can use any cheese you want! You can use cheddar, or really any other type of cheese or combination of cheeses.
–Add some veggies: This breakfast casserole is pretty plain and veggie-free but go ahead and add as many veggies as you want. Add peppers, onions, mushrooms… all great in this recipe!
