Lemon Berry Yogurt Parfaits made with sweetened whipped cream, yogurt and lots of fresh berries. Simple no-bake dessert or snack that is light and delicious!
Lemon Berry Yogurt Parfaits are so easy to make! Mixing whipped cream with powdered sugar and lemon yogurt makes a refreshing creamy layer that goes so well with strawberries and blueberries. Or any other type of fruit! You can even use a different flavor of yogurt if you prefer, but I think I love lemon the most. Add some crushed Golden Oreos on top for a little extra sweetness and crunch!
Ingredients in Lemon Berry Yogurt Parfaits
Whipping cream – I like to use heavy cream, but you can use regular whipping cream if you prefer. You can also use Cool Whip instead if you are trying to cut calories and time! If you do use Cool Whip, you won’t need the powdered sugar or vanilla.
Powdered sugar – You need some powdered sugar to help sweeten up the whipping cream.
Vanilla extract – I suggest using a good quality vanilla extract or a Vanilla Bean Paste.
Lemon yogurt – You will need an 8 ounce container of yogurt. I like to use Greek yogurt for the added protein, but you can use regular yogurt. You can use a different flavor if you’d like, but I really love lemon in this recipe!
Strawberries and blueberries – You’ll need 2 cups of sliced or chopped strawberries and 2 cups of blueberries. I like to add raspberries as well, and blackberries are delicious too! And I like to add extra berries too…you really can’t have too many!
Shortbread cookies or Golden Oreos -Crumble a few cookies up to sprinkle on top of the parfaits to add some flavor and crunch.
How to make Lemon Berry Yogurt Parfaits
In a chilled mixing bowl, beat whipping cream, powdered sugar and vanilla with an electric mixer until soft peaks form. By hand, fold in the yogurt and half of the berries.
Spoon some of the whipped cream mixture into the bottoms of four 10-oz sundae dishes (parfait cups, etc). Top with some of the remaining berries and then the rest of the whipped cream mixture and then the rest of the berries.
Serve immediately or cover and chill for a few hours. Right before serving, sprinkle with the crumbled cookies.

HEAVY CREAM OR WHIPPING CREAM?
When purchasing cream to make whipped cream, I prefer to buy heavy cream. It has a higher fat content and yields a creamier, more stable whipped cream. Stability in cream is important because it means you can pipe it on to desserts and it will maintain the lovely shape better. Have you ever piped canned whipped cream onto a dessert then noticed a few minutes later it begins to flatten? Heavy cream doesn’t do that nearly as much, especially if you stabilize it.
WHAT TYPE OF HEAVY CREAM SHOULD I USE FOR WHIPPED CREAM?
All heavy creams are not created equally! Heavy cream is required to have at least a 36% fat content, but the brands on the shelf at the grocery store vary between 36-40%. (In contrast, whipping cream has only 30-35% fat.) So check the label and make sure you purchase the highest fat % of heavy cream you have available.
Are Lemon Berry Yogurt Parfaits healthy?
These yogurt parfaits are definitely a little more on the dessert side than the healthy snack side, but there are a few things you can do to reduce the calories and make them a little more healthy.
-Substitute Cool Whip for the whipped cream. This will reduce the calories by a lot!
-Use Greek yogurt. If you use Greek lemon yogurt, you can add quite a bit of protein to the dessert which will make it more filling.
-Make 6 parfaits instead of 4. Use a little less of the lemon filling and use more fruit and make a couple more parfaits to reduce the calorie count in each parfait.
-Skip the cookies. I love the crunch and added flavor of the Golden Oreos on top, but you can definitely leave them off without sacrificing much flavor.
