LEMON JELLO CAKE
This simple cake recipe is made with lemon jello and a lemon cake mix. Add water, eggs, and oil to make a delicious cake that is packed with lemon flavor. You can add a dollop of whipped cream on top of each slice, or you can make a simple lemon glaze with lemon juice and powdered sugar.
INGREDIENTS IN LEMON JELLO CAKE
Lemon jello – You will need a small (3 oz) box of lemon jello mix. Make sure to get lemon gelatin, NOT lemon pudding!
Water – Add a cup of boiling water to the Jello in order to dissolve the Jello before adding it to the cake mix.
Cake mix – A box of lemon cake mix or white cake mix provides the base for this cake recipe. Using lemon cake mix provides a more intense lemon flavor to the cake.
Eggs – Four large eggs will help to bind everything together.
Oil – You will need oil to provide the rest of the moisture and the fat for the cake. You can use vegetable or canola oil, or even coconut oil. If you use coconut oil, make sure it is melted before adding to the recipe.
LEMON GLAZE:
Lemon juice – You can use fresh lemon juice or the kind from a bottle to add liquid and lemon flavor to the simple glaze for the top of the cake.
Powdered sugar – This will add a sweet smoothness to the glaze.
HOW TO MAKE LEMON JELLO CAKE
Preheat oven to 350°.
Dissolve Jello in boiling water.
Let the mixture cool for about 5-10 minutes and then add to the cake mix.
Add eggs and oil and mix well.
Bake in a greased cake pan (9″X13″) for 30 minutes. The cake is done when a toothpick inserted in the middle comes out clean.
Mix the glaze ingredients and drizzle over the hot cake.

JELLO CAKE VARIATIONS
This lemon cake recipe calls for a lemon cake mix and lemon jello. You can use any type of cake mix and any kind of jello to create all kinds of flavor combinations. Strawberry or raspberry Jello both pair well with lemon cake, but you can add any Jello flavor to a white cake mix.
Can I make Lemon Jello Cake in a bundt pan?
This cake is easily made in a 9X13 pan, but if you want to make it look a little fancier if you bake it in a Bundt pan. You will need to cook the cake longer (40-45 minutes) if you use a Bundt pan.
TIPS FOR MAKING A CAKE IN A BUNDT PAN (AND GETTING THE BUNDT CAKE OUT OF THE PAN TOO!)
There is nothing worse than making a delicious bundt cake and then having it get stuck when you are trying to get it out of the pan! It may take a little bit of trial and error depending on which kind of Bundt pan you are using, but over the years I have learned a few tips that help make sure your cake comes out successfully!
–Use a quality non-stick pan like this one. They aren’t very expensive and the investment will be worth it when your cakes come out beautifully every time!
–Grease your pan! I know. You are wondering why you need to grease a non-stick pan because usually you don’t! In fact, most of your non-stick pans will tell you not to use cooking spray at all because it will build up on the pan and make it less effective over time. That is true, but you still need to grease the pan somehow or it will likely stick. I have a very nice non-stick Bundt pan and I was excited to try it out because I was told that nothing would stick to it and that it didn’t need to be greased at all. The cake was totally stuck in the pan when it was done baking!!!
- If you have a non-stick pan, grease it with melted shortening. I have had better luck with shortening than with butter. Just melt a little bit of shortening and then apply to the entire inside of the Bundt pan with a pastry brush.
- If you don’t have a non-stick pan, you can use this type of cooking spray – it works miraculously because there is flour mixed in with the spray. I have an older pan that is not non-stick and when I use this spray, my Bundt cakes come out perfectly every single time. If your pan is really old and the inside is really scratched up and your cakes keep sticking, it may be time to get a new pan!
- Also, make sure to grease your pan right before pouring the batter in. If you grease the pan too far ahead of time, the oil may drip down to the bottom of the pan, leaving the sides less coated.
