GLAZED STRAWBERRY BREAD

The texture and consistency are very similar, but the fresh strawberries are just an amazing addition! My husband didn’t seem to think that adding strawberries to bread was the best idea, until he tried it. He just keep eating more and telling me how good it was.

I love quick breads because you don’t have to wait for them to rise. And the fact that most quick breads are really sweet and a little more like dessert doesn’t hurt either! This recipe makes two regular sized loaves, or you can make 4 small loaves or you can do 1 regular loaf and 2 small loaves. My smaller loaves baked for about 20 minutes less than the regular ones, so just make sure to keep a close eye on them and check them after about 40 minutes.

The original glaze called for regular cream cheese, but I decided to use strawberry cream cheese and I don’t think I will ever go back to the original recipe! The strawberry cream cheese added a wonderful strawberry flavor and it complements the bread so well. I like to put the glaze into a condiment squeeze bottle in order to make a nice, uniform drizzle, but you can use a knife and frost it onto the top of the bread also. Or drizzle it on with a spoon. Or just eat it with a spoon. Whatever works!

GLAZED STRAWBERRY BREAD

  • 3 cups flour
  • 2 cups sugar
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 tsp cinnamon
  • 4 eggs, beaten
  • 1 1/4 cups vegetable oil (I like to use coconut oil!)
  • 2 cups fresh strawberries, chopped into bite-sized pieces

GLAZE:

  • 1 cup powdered sugar
  • 2 oz. strawberry cream cheese, softened
  • 2 Tbsp. butter, softened
  • 1/2 tsp. vanilla
  • 1-2 Tbsp. milk, until desired consistency.
  1. Combine flour, sugar, baking soda, salt and cinnamon in a large bowl.
  2. In a separate bowl, combine the eggs and oil and mix together well. Add to the dry ingredients and mix until combined.
  3. Fold in the strawberries.
  4. Spoon mixture into 2 greased regular sized loaf pans. Bake at 350° for 1 hour. (If making smaller loaves, bake for about 40-45 minutes.) Cool loaves in pans for about 10 minutes. Remove to wire racks and cool completely and then drizzle with glaze if desired.
  5. GLAZE: Mix all ingredients together and beat well with an electric mixer. Start with 1 tablespoon of milk and then add a little bit more if glaze is too thick.
