Blondies
Butter: I use salted butter, but you can use unsalted if you prefer. No margarine! Make sure the butter is softened to room temperature, but not melted before adding to the recipe.
Sugar: Gotta make sure your dessert is sweet enough!
Eggs: You will need 1 egg, plus an additional egg yolk to bind the recipe together and create the perfect consistency.
Lemon juice: You can use fresh squeezed lemon juice or the kind from a bottle – they both work just fine!

Flour: I usually use all purpose flour, but you can use bread flour, or even pastry flour in this recipe.

Vanilla extract: I suggest using a good quality vanilla extract or a Vanilla Bean Paste.
Lemon extract: Yep, more lemon extract! Makes the flavor so strong!
Strawberries OR strawberry jam: The pink coloring and strawberry flavor in the glaze comes from either mashing up two strawberries or using seedless strawberry jam. If you do mash strawberries, make sure to drain out the seeds so that your glaze will be smooth.
How to make Strawberry Lemon Blondies
Preheat Oven
Preheat the oven to 350° degrees.
Prepare Pan
Prepare a 9 X 9 square pan with cooking spray and flour or parchment paper.
Mix Wet Ingredients
In a mixing bowl, cream the butter and sugar for about 2-3 minutes or until fluffy. Add the egg and egg yolk and beat for another 2-3 minutes. Then add the lemon juice and lemon extract and beat for another minute.
Mix Dry Ingredients
In a small bowl, whisk the flour, salt, and baking powder together.
Combine Ingredients
Add the dry ingredients to the wet ingredients and mix just until combined.
Add Strawberries, Lemon Zest and White Chocolate Chips
Gently fold in the diced strawberries, lemon zest and white chocolate chips
Spread Mixture
Spread the mixture evenly into the pan, making sure the corners are filled.
Bake Blondies
Bake for 30 – 35 minutes or until a toothpick inserted in the center comes out clean. Do not overbake. Set the pan on a wire rack to cool.
Make the Glaze
Make the glaze by putting 2 strawberries into a food processor and then straining through a sieve afterwards. You could use a teaspoon of seedless strawberry jam instead. Add the powdered sugar, vanilla, lemon juice, and lemon extract to the strawberries and whisk together. You may need to add 1 teaspoon of water if the glaze is too thick. Let the glaze set in the refrigerator for about 20-30 minutes before icing. Spread the glaze on cooled blondies. Slice and serve.

I use the lowest defrost setting on my microwave and just let it run for 20 seconds. Check the butter and see how soft it is by pressing it with a rubber scraper. If it is still not soft to the touch, meaning it doesn’t indent when you press into it, let it warm for another 5-10 seconds. Watch it closely! Butter softens very quickly.
