This time of year is all about pumpkin flavors, so I decided to make a Pumpkin Spice granola to layer with the pumpkin-flavored yogurt I picked up. It is a fun after-school treat that the whole family enjoys. These little parfaits are so easy to put together and are the perfect fall snack!
From the homemade granola, to the light yogurt, this is a healthier dish to serve up. Packed with vitamins, calcium, fiber, and great taste, you really can’t go wrong! Pumpkin granola is so easy to make and tastes even more delicious when layered with Pumpkin Pie yogurt. This pumpkin yogurt parfait recipe is almost like a dessert for breakfast.

Oats: You will need 5 cups of rolled oats for this recipe, but if you want to add some chopped nuts to your granola, you will need 3 cups of oats and 1 cup of nuts. You can use almonds, walnuts, or even pecans.
Salt: Add ½ tsp salt to enhance all the wonderful flavors in this snack.
Spices: For a nice warm, inviting flavor use 1 ½ tsp of each ground cinnamon and pumpkin pie spice.
Honey: Using ½ cup of honey will sweeten the granola perfectly.
Brown sugar: Adding ¼ cup of brown sugar will give the granola a wonderful depth of flavor and caramelization.
Coconut oil: You need ⅓ cup of coconut oil that has been warmed to its liquid form.
Vanilla extract: Add 2 tsp of vanilla extract to make this granola taste fantastic.
Pumpkin: For real pumpkin flavor, use 3 TBSP of pumpkin puree.
Yogurt: For the parfait building, you will need some pumpkin flavored yogurt. I used one 6-ounce container of Yoplait light pumpkin yogurt to make two mini parfaits, but feel free to use any yogurt brand and flavor of your choice.
How to make Pumpkin Granola Yogurt Parfaits
Prep
Get started by preheating the oven to 325 F and lightly grease a large baking sheet with non-stick cooking spray.
Granola mixture
Next in a large bowl, combine the oats, salt, cinnamon, and pumpkin pie spice.
In a separate small bowl, whisk the honey, brown sugar, coconut oil, vanilla extract, and canned pumpkin until well combined.
Proceed to add the wet mixture to the dry oat mixture and stir until the granola is well coated.
Bake
Continue to spread the granola mixture evenly onto the prepared baking sheet and bake in 15 minutes intervals, stirring between each until ready. The granola is ready when all of it is golden brown and no longer moist (mine was ready after about 55 minutes).
Be sure to allow the granola to cool completely before assembling the parfaits. I typically let mine cool for 15-20 minutes.
Assemble parfaits
Using single serving dishes, add a spoonful of granola to the bottom of the dish. Then, add two spoonful’s of yogurt on top of the granola. Next, add another spoonful of granola on top of the yogurt, then another layer of yogurt and finally, top it off with more granola.
Serve immediately and enjoy!

How long is homemade granola good for?
You can keep this homemade granola stored in an airtight container at room temperature for up to a week. This granola doesn’t have a very long shelf life when compared to store bought or other homemade granola, and that is because we add in the canned pumpkin, which shortens the lifespan a bit.
Can granola go bad?
Yes, granola whether store bought or homemade, can go bad as it does have an expiration date. The older it gets, the more you risk it getting moldy (if it had moisture exposure), or it could become stale, hard, or overly chewy, making it unpleasant to eat.
Can I freeze homemade granola?
Yes! Homemade granola does very well in the freezer. I recommend laying it flat on a parchment lined baking sheet after it has cooled completely and then freezing it for 2 hours until solid. Then break apart any chunks and place the granola in an airtight container in the freezer until ready to eat (up to 3 months).
Can you recommend alternative sweeteners to honey in granola?
Individuals can consider maple syrup or agave nectar as substitutes for honey. Both sweeteners provide a similar level of sweetness and can complement the granola’s flavor. Brown sugar can also be used in combination with other sweeteners for added depth.
What type of oil can be used if coconut oil is not available?
