PUMPKIN GRANOLA YOGURT PARFAITS
Pumpkin Granola Yogurt Parfaits are a delicious and nutritious treat, perfect for breakfast or a snack! This easy granola recipe combines crunchy oats with the rich flavors of pumpkin and warm spices, layered with creamy yogurt for a satisfying experience.

- 5 cups rolled oats if you want to add chopped nuts (almonds, walnuts, pecans, do 3 cups of oats and 1 cup nuts instead)
- ½ tsp salt
- 1 ½ tsp cinnamon
- 1 ½ tsp pumpkin pie spice
- ½ cup honey
- ¼ cup brown sugar
- ⅓ cup coconut oil warmed to liquid form
- 2 tsp vanilla
- 3 TBSP canned pumpkin
- Yoplait light Pumpkin Pie yogurt - I used one 6 oz container to make 2 mini parfaits
Prep: Preheat the oven to 325F and lightly grease a large baking sheet with non-stick cooking spray. Granola mixture: In a large bowl, combine the oats, salt, cinnamon, and pumpkin pie spice. In a separate small bowl, whisk the honey, brown sugar, coconut oil, vanilla extract, and canned pumpkin. Add the wet mixture to the oat mixture and stir until the granola is well coated.
Bake: Spread the granola mixture evenly onto the prepared baking sheet and bake in 15 minutes intervals, stirring between each until ready. The granola is ready when all of it is golden brown and no longer moist (mine was ready after about 55 minutes). Be sure to allow the granola to cool completely before assembling the parfaits. I typically let mine cool for 15-20 minutes.
Assemble parfaits: Using single serving dishes, add a spoonful of granola to the bottom of the dish. Then, add two spoonful's of yogurt on top of the granola. Next, add another spoonful of granola on top of the yogurt, then another layer of yogurt and finally, top it off with more granola. Serve immediately and enjoy!
