CADBURY MINI EGG RICE KRISPIE TREATS
We love Rice Krispie Treats and this Easter version is so perfect for spring. Cadbury Mini Eggs are our favorite Easter treat and they are amazing in Rice Krispie treats. Not only does the chocolate pair perfectly with the cereal and marshmallows, but the candies look pretty too! Drizzle some white chocolate on top for more flavor and a little bit of added decor.
INGREDIENTS IN MINI EGG RICE KRISPIE TREATS
Butter – Just 5 tablespoons of butter will help to thin out the melted marshmallows to the perfect consistency. I always use salted butter, but I’m sure unsalted would work just fine as well.
Mini marshmallows – You will need a total of 7 cups of mini marshmallows. You will be melting 6 cups along with the butter, and reserving the other cup to add in to the rice krispie treats after mixing everything together.
Vanilla extract – A teaspoon of vanilla extract adds a little bit of extra flavor.
Salt – Just 1/4 teaspoon of salt will help all of the other flavors to pop.
Rice krispie cereal – You will need 6 cups of crispy rice cereal (Rice Krispies). You can use the chocolate ones or other flavors if you’d like to change things up a little bit.
Cadbury mini eggs – Yep, those candies that sometimes are hard to find around Easter because everyone loves them! When I know I’ll be using these in a recipe, I have to hide them somewhere tricky so my kids don’t find them and eat them before I have a chance to use them! You can use M&Ms instead if you prefer! You’ll need about 1 2/3 cup total – I usually just use a 9 ounce bag. You’ll be crushing them up a little bit, but you want large chunks so don’t crush them too much. You can use a knife or you can place them in a Ziplock bag and hammer them with a rolling pin or meat mallet or even a small hammer.
White chocolate chips – Melt about a cup of white chocolate chips to drizzle over the top. More flavor and yumminess and it looks pretty too!
HOW TO MAKE MINI EGG RICE KRISPIE TREATS
Butter a 9×9 baking dish.
In a large saucepan, melt the butter over medium heat. Once melted, add 6 cups of mini marshmallows.
Reduce heat to low and continue stirring just until the marshmallows are melted. Remove from the heat and stir in the vanilla and salt.
Add the rice krispie cereal and stir until combined. Fold in the remaining cup of mini marshmallows and then add 1 cup of mini eggs and fold them in. You’ll want to stir gently but quickly so the chocolate doesn’t melt too much.
Using a buttered spatula, GENTLY press the rice krispie mixture into the pan so that it is spread out evenly. If you press the mixture too hard, the treats will be hard as well. The harder you press the harder the treats will be. Set aside.
Melt the white chocolate in the microwave in short bursts of 20 seconds, stirring each time.
Drizzle the melted white chocolate over the bars. Sprinkle the remaining 1 cup of mini eggs on top.
Allow to set at room temperature for 1 hour.
Cut into 9 large bars or 18 small bars.
MINI EGG RICE KRISPIE TREATS
Ingredients

- 1 ⅔ cup crushed or chopped Mini Eggs divided
- 1 cup white chocolate chips

HOW DO I KEEP MY RICE KRISPIE TREATS FROM STICKING AND CREATING A MARSHMALLOW MESS?
I always spray my rubber spatula with a good coating of cooking spray and then mixing my Krispie Treats is so much easier! You can also spray the mixing bowl you use and of course, spray the 9×9 glass pan with cooking spray too. No more mess!
HOW DO YOU KEEP RICE KRISPIE TREATS SOFT?
Here are several ways to keep rice krispie treats soft. They’re simple, but effective!
- Make sure to not use stale marshmallows. Seriously. Rice Krispie Treats are not the treat to use up those old, hard marshmallows! Recently purchased marshmallows work best.
- Watch that you don’t overcook. You only want to heat the marshmallows just until they are melted.
- Always remember the butter. The marshmallow-butter combination helps keep the treats soft and chewy, so don’t leave it out or reduce the measurement.
- Don’t chill in the refrigerator. Even if you want them to set quickly, I find this just dries the marshmallow treats out more quickly.
- Store in an airtight container on the counter top.
HOW TO MAKE THE BEST RICE KRISPIE TREATS
The key to making the best rice krispie treats is more marshmallows! Of course there are lots of marshmallows in the recipe that are melted with the butter, but the trick is to add MORE marshmallows after you have mixed the cereal in. These marshmallows will soften, but keep their shape, and they make every rice krispie treat recipe taste better.
Try adding 1-2 cups of marshmallows to your favorite rice krispie treat recipe, and I promise you’ll love it even more! Just make to sure to wait until after you’ve mixed the cereal in so that the mixture isn’t still hot enough to completely melt the additional marshmallows.
CAN YOU MAKE RICE KRISPIE TREATS IN THE MICROWAVE?
I usually make rice krispie treats on the stovetop, but they are easily made in the microwave too!
To make the rice krispie treats in the microwave, place the 6 cups of mini marshmallows in a microwaveable bowl and then cut up the butter in small pieces and add them to the bowl.
Microwave marshmallow and butter for 1 minute 25 seconds. Stir until completely smooth and then stir in the vanilla and salt. Pour in cereal and stir until well combined. Stir in remaining 1 cup of mini marshmallows and then fold in the Cadbury mini eggs.
