My husband took one bite of these amazing Krispie Treats, looked at me and promptly asked why I don’t make these more often. We love Krispie treats so they’re a pretty regular occurrence. But Cocoa Krispies + Mint + Marshmallows= heaven! Let me tell you, I’ll be making them more often for sure!

Mint Chocolate Krispie Treats
- 6.5 cups Cocoa Krispies
- 1 10-oz bag mini marshmallows (1/2 cup set aside)
- 3 TBSP butter
- 1 small box Andes mints (28 pieces)
Chocolate Mint Drizzle
- 1/4 cup semisweet chocolate chips
- 1 tsp mint extract
- 1 TBSP butter
Directions
Measure Cocoa Krispies into a bowl and set aside.
Coarsely chop Andes mints.
Spray a 9×13 pan and a rubber scraper with cooking spray.
In a large, microwaveable bowl combine the butter (cut into smaller pieces) and the mashmallows. Microwave on high for 1 minute 30 seconds, until marshmallows are puffed up and melted.
Quickly pour in the Cocoa Krispies and begin stirring to combine. Once the mixture is nearly all mixed together add the Andes mints and remaining 1/2 cup marshmallows. Quickly combine the ingredients then transfer to the 9×13 pan, pressing in until level.
Place pan in fridge to cool while you make the drizzle.
Melt semisweet chocolate chips and butter for about 30-45 seconds in the microwave. Stir gently and add the mint extract. Transfer to a small baggie, then snip the corner. Drizzle over cooled treats. Let chocolate set before cutting into squares.

- 1/4 cup semi sweet chocolate chips
- 1 tsp mint extract not peppermint! Look for the green mint leaf on the package!
- 1 TBSP butter
- White chocolate to drizzle on top if you'd like!
Instructions
- Measure Cocoa Krispies into a bowl and set aside.
- Coarsely chop the Andes Mints. Leave some bigger pieces
- Spray a 9x13 pan and a rubber scraper (both sides) with cooking spray.
- In a large, microwaveable bowl, combine the butter (cut up into smaller pieces) and all but 1/2 cup of the marshmallows. Microwave on high for about 1 minute and 30 seconds, until marshmallows are puffed up.
- Quickly pour in the Cocoa Krispies and begin stirring to combine. Once the mixture is nearly all mixed together, add in the Andes Mints and the 1/2 cup marshmallows you set aside. Quickly combine the ingredients, then transfer mixture to the 9x13 pan and press treats into the pan, until level. (You want to do this quickly since you want the Andes chocolate to melt a little bit, but have some larger pieces remaining.)
- Place pan in the fridge to cool while you prepare the drizzle.
- Melt semi sweet chocolate chips and butter in the microwave for about 30-45 seconds. Stir gently and add in mint extract. Quickly transfer to a small baggie. Snip the corner off the baggie and, once you take the Krispie treats out of the fridge, drizzle the mint chocolate on top. You can also add some white chocolate drizzle on top of that like I did- it looks pretty!

Please stop tempting me with all these delicious treats! I have never made any marshmallow treats but the originals, and I am thinking now of all the things I COULD make. Chocolate and mint can never be bad, the Girl Scouts proved that long ago!

I cannot locate the amount of Andes mints to put in the recipe. How much do I need? (Plus extra for eating by themselves) These look amazing!
