Mini Chocolate Cheesecakes made with a rich chocolate cheesecake filling and a vanilla wafer cookie crust. Simple cheesecake recipe perfectly portioned and easy to serve!
Cheesecake is one of my favorite desserts. We have multiple cheesecake recipes on our site that are all so delicious – it’s really hard to decide which one to make when I get a craving for some cheesecake!
Regular cheesecakes are a bit time consuming and a little bit tricky to get right, but these mini cheesecakes are very simple, bake in 15-20 minutes and have the perfect texture and chocolate flavor.
What are Mini Chocolate Cheesecakes?
Mini Chocolate Cheesecakes are made with a vanilla wafer crust, cream cheese, sour cream, sugar, cocoa, flour, eggs and vanilla extract. Baked in a muffin tin, these little cheesecakes are ready to serve as soon they are baked and chilled!
Ingredients in Mini Chocolate Cheesecakes
Vanilla wafers – You will need 24 vanilla wafers. Placing each one in a cupcake wrapper will form the crust for each cheesecake. You can also swap the vanilla wafers out with half of an Oreo cookie (break it apart and remove the filling – so you would need 12 Oreos total). More chocolate is never a bad idea!
Cream cheese – Two eight-ounce packages of cream cheese are needed in the recipe. You can use regular cream cheese or a low-fat or non-fat variety.
Sour cream – You will need eight ounces of sour cream. You can swap this out with plain Greek yogurt if you’d like. This will reduce the fat and add some protein too!
Sugar – Yep, you need some sugar to add all the sweetness!
Cocoa powder – You will need a third cup of unsweetened cocoa powder.
Flour – Just a couple tablespoons of flour will help the mixture to thicken up to the correct consistency when it bakes.
Eggs – Three eggs help to bind everything together and work to thicken the cheesecake as well.
Vanilla extract – The higher the quality of vanilla, the better!
How to make Mini Chocolate Cheesecakes
Preheat oven to 350°.
Line 24 muffins cups with paper cupcake liners. Place one vanilla wafer on bottom of each cup.
In a large mixing bowl, combine cream cheese and sour cream. Add sugar, cocoa and flour and blend well. Add eggs and vanilla and beat well for 2-3 minutes.
Fill each prepared cup almost full with cheese mixture. Bake for 15-20 minutes or just until centers are set.
Cool to room temperature and then refrigerate for at least 2-3 hours before serving. Top with whipped cream and chocolate shavings or chocolate syrup drizzle.

WHAT KIND OF CREAM CHEESE TO USE IN CHEESECAKE?
I usually use regular cream cheese, but you can also use a low-fat or non-fat variety in cheesecake. Just make sure it is softened to room temperature before adding to the recipe.
HOW TO SOFTEN CREAM CHEESE
Cream cheese is easy to soften – you can set it out at room temperature or soften it more quickly in the microwave.
-To soften at room temperature more quickly, just set the cream cheese on a plate and cut into smaller pieces. The cream cheese should reach room temperature in about 15-20 minutes with this method.
-To soften the cream cheese in the microwave, remove the foil packaging and set the cream cheese in a small bowl or on a plate. Microwave for about 10-15 seconds. If the cream cheese is still cold and hard, continue to microwave for about 5 seconds at a time until the cream cheese is soft throughout. Just make sure not to microwave it too long or it will start to melt!
HOW TO MAKE WHIPPED CREAM?
Whipped cream is so easy to make. All you need is 2 cups (1 pint) of heavy cream, 1/2 cup powdered sugar and 1 tsp vanilla extract. Place the heavy cream in a bowl and beat with a mixer for about 4-5 minutes, or until the mixture thickens. When you pull the whisk up, the cream should form peaks that maintain their shape. Add the powdered sugar and vanilla and mix for another minute. Serve immediately with dessert or save in the refrigerator until ready to serve.
CAN I FREEZE MINI CHOCOLATE CHEESECAKES?
These cheesecakes can be frozen and do quite well in an airtight container for up to 3 months. For ease of serving, I like to wrap each mini cheesecake in plastic wrap really well. This makes for ease of freezing and for quick serving later on.
HOW LONG WILL MY HOMEMADE CHEESECAKE LAST?
These little cheesecakes will last 3-5 days if stored in an airtight container and kept in the refrigerator. They are meant to be served cold, do not keep them on the counter or they will lose their amazing texture!
