A grilled Italian sausage sandwich with peppers and onions is one of those meals you’re going to want to include at your next tailgate party. We are big fans of college football in this house so these sausages are consumed pretty often. Fact- everything tastes better on game day.
Tailgate Sausage Recipe
While you don’t necessarily have to serve these sausages up on game nights, they do go well with other tailgate foods. But, they’re also perfect for summer and simple side dishes like coleslaw, potato chips, and fruit salads.

Ingredients for Pepper and Onion Sausages
Sausages– You will need 5 Italian sausages for this recipe. I use Sweet Turkey Italian Sausages.
Onion– One red onion is needed for added flavor and sweetness.
Bell pepper– You will want to use 1 bell pepper. You can use any color desired.
Olive oil– You’ll just need a bit of olive oil for sauteeing the veggies.
Bread– For serving the sausages, you will need 5 bread buns, so one bun per sausage.
How to Make Grilled Italian Sausages and Peppers
Grill your sausages until they are cooked to your liking.
While the sausages are grilling, heat the olive oil in a frying pan on the stove.
You can add in any seasonings that you like. I enjoy adding in a few shakes of an all-seasoning blend by McCormick, as well as some salt and pepper.
Slice your red onion and bell pepper thinly and add them to the pan of oil. Let cook for about 5 minutes until they’re soft but not mushy. If the bell peppers taste bitter, just add a dollop of honey into the mixture to help sweeten the veggie blend.
Serve your sausages in bread buns and top with a few peppers and onions. You can eat them as-is, or if you’re like my husband, you may enjoy topping them with some ketchup. Enjoy!
Grilled Italian Sausages with Peppers
Ingredients
- 5 Italian Sausages {I used Sweet Turkey Italian Sausages- yum!}
- 1 red onion
- 1 bell pepper
- olive oil for sauteing
- 5 bread or buns for serving them in
Instructions
- Grill the sausages.
- While those are cooking, heat olive oil in a frying pan. Add any spices you’d like- I added a few shakes of a nice all-seasoning blend by McCormick, plus some salt & pepper.
- Slice the red onion and bell pepper and saute in the oil for about 5 minutes, until they’re soft, but not mush. If the bell peppers are a little bitter, add a small dollop of honey to the mixture- it adds a nice sweetness and glazes the veggies a bit as they cook.
- Top the sausage with a few peppers in a bun and you’re done! My husband likes to add ketchup, I prefer to taste the sausage and peppers by themselves!

What to serve with sausage and peppers
This dish would be great served alongside any number of side dishes like EGG MACARONI SALAD, BACON CHEDDAR DEVILED EGGS, GARLIC POPPY SEED SPIRALS, or RED WHITE AND BLUE PASTA SALAD.
Can I use bratwurst instead of sausages?
Absolutely! You can use brats or sausages for this recipe, and I think that it’d taste great either way. Go ahead and use your favorite sausages. I used Sweet Turkey Italian Sausages because I like the flavor in contrast to the savory sweet onions and peppers.
