Funfetti Rice Krispie Treats made with Funfetti cake mix taste just like birthday cake! Only 5 ingredients are needed to make this delicious no-bake dessert recipe!
We love Rice Krispie treats, especially since there are so many ways to change them up. Mix in a little bit of Funfetti cake mix and a few sprinkles to make a no-bake dessert that tastes just like your favorite birthday cake.
It’s no secret that we love Rice Krispie Treats! Here are a few reasons why:
- So easy to make! Rice Krispie Treats only require a few ingredients and take about 5 minutes to prepare. Just set them up for about an hour and they are ready to eat – no baking required!
- So many variations. Even though I love traditional Rice Krispie Treats, I also love how easy it is to change them up a little bit.
- They are delicious! I make a lot of desserts, but Rice Krispie Treats are still one of my all-time favorites and every time I make them for a party, they are devoured in minutes.
HOW DO YOU KEEP RICE KRISPIE TREATS SOFT?
Here are several ways to keep rice krispie treats soft. They’re simple but effective!
- Make sure to not use stale marshmallows. Seriously. Rice Krispie Treats are not the treat to use up those old, hard marshmallows! Recently purchased marshmallows work best.
- Watch that you don’t overcook. You want to heat the marshmallows just until they are melted, not any longer than that!
- Always remember the butter. The marshmallow-butter combination helps keep the treats soft and chewy, so don’t leave it out or reduce the measurement.
- Don’t chill in the refrigerator. Even if you want them to set quickly, I find this just dries the marshmallow treats out more quickly.
- Don’t press the mixture too firmly in the pan. The harder you press, the more hard and dry the rice krispie treats will be.
- Store in an airtight container on the countertop and eat within 2 days for best results!
INGREDIENTS IN FUNFETTI RICE KRISPIE TREATS
Mini marshmallows – You will need a 16-ounce bag of mini marshmallows. Reserve 3 cups of the marshmallows and melt the rest of them with the butter.
Butter – You will need 1/2 cup of butter to melt with the marshmallows. I always use salted butter, but I’m sure unsalted would work just fine as well.
Rice Krispie cereal – You will need 6 cups of crispy rice cereal (Rice Krispies).
Funfetti cake mix – Adding a cup of cake mix to the Rice Krispie treats adds a lot of flavor! You can use a different flavor of cake mix if you prefer.
Vanilla extract – Just a teaspoon of vanilla extract adds more flavor to this popular dessert. The higher the quality of the vanilla, the better.
Sprinkles – You don’t have to add sprinkles, but they add a lot of color!
HOW TO MAKE FUNFETTI RICE KRISPIE TREATS
Prepare a 9X13 pan by coating it with butter.
Take 3 cups of marshmallows out of the bag and set aside.
Add the remaining marshmallows and butter to a large pot and melt over the stove on medium heat. Stir frequently until completely melted and smooth.
Remove from heat and stir in the cake mix and vanilla.
Add in Rice Krispies and stir just until completely coated.
Add the reserved marshmallows and stir just until combined. These marshmallows won’t completely melt, which is perfect!
Place the mixture in the prepared pan and use your fingers or the back of a greased spoon to press into the pan evenly.
Immediately spread sprinkles over the top (optional).
Once the Rice Krispie treats have cooled completely, you can slice and serve them. Store them in an airtight container at room temperature.
FUNFETTI RICE KRISPIE TREATS
Ingredients
- 16 ounce bag of mini marshmallows divided
- ½ cup butter
- 6 cups Rice Krispies
- 1 cup Funfetti cake mix
- 1 tsp vanilla extract
- sprinkles optional
Instructions
- Prepare a 9X13 pan by coating it with butter.
- Take 3 cups of marshmallows out of the bag and set aside.
- Add the remaining marshmallows and butter to a large pot and melt over the stove on medium heat. Stir frequently until completely melted and smooth.
- Remove from heat and stir in the cake mix and vanilla. Add in Rice Krispies and stir just until completely coated. Add the reserved marshmallows and stir just until combined. These marshmallows won’t completely melt, which is perfect!
- Place the mixture in the prepared pan and use your fingers or the back of a greased spoon to press into the pan evenly.
- Once the Rice Krispie treats have cooled completely, you can slice and serve them. Store them in an airtight container at room temperature.

HOW DO I KEEP MY RICE KRISPIE TREATS FROM STICKING AND CREATING A MARSHMALLOW MESS?
I always coat my rubber spatula with a little bit of butter or non-stick cooking spray and then mixing my Krispie Treats is so much easier! You can also spray the mixing bowl you use and of course, butter up the 9×9 glass pan with cooking spray too.
I find the easiest way to do this is to stick my hand in a plastic sandwich bag as if it is a glove. Press your covered fingers in a little bit of softened butter and then spread that all over the pan. You can do the same thing to press the mixture into the pan.
SIMPLE VARIATIONS ON FUNFETTI KRISPIE TREATS
The birthday cake flavor in these Rice Krispie Treats comes from adding Funfetti cake mix. If you want to change the flavor, you can use a different kind of cake mix. Chocolate, white, red velvet, lemon…any type of cake mix works great! Such a fun and easy way to change up traditional Rice Krispie treats!
