We love breakfast foods and we especially love French toast. We have breakfast for dinner at least once a week, sometimes more. French toast is a favorite, but it’s hard to get all of the French toast ready at the same time, since you can only fit a few pieces at a time on the skillet. These French toast muffins are so easy to make and they all bake in the oven at the same time, so you can get get everything else ready to eat while they bake, and everyone can sit down and eat at the same time!
FRENCH TOAST MUFFINS
French Toast Muffins are made by cutting sourdough bread into cubes. The bread is added to a mixture of eggs, milk, sugar, cinnamon and vanilla and then divided into individual cups in a muffin tin. A simple streusel topping is made with flour, butter, brown sugar and cinnamon. After the topping is sprinkled over each muffin, the French Toast muffins are baked. They are delicious plain, but even better when served with fruit, syrup or powdered sugar.
WHAT TO SERVE WITH FRENCH TOAST MUFFINS?
French Toast Muffins make a delicious breakfast when paired with Scrambled Eggs and fresh fruit or our Easy Mango Fruit Salad. If you really want to have the perfect breakfast, make sure to add some bacon too!
INGREDIENTS IN FRENCH TOAST MUFFINS
Bread – The recipe calls for 1 loaf of sourdough bread, but you can use french bread or regular white bread or if you really want to step it up a notch, use brioche bread. You’ll need about a pound of bread, but you can use any type you’d like.
Milk – You will need 2 cups of milk to mix with the eggs. You can use any type of milk, even a non-dairy variety. If you would like to make the mixture even more rich, you can use half and half or heavy cream instead of the milk.
Eggs – You will need 6 large eggs in the recipe.
Sugar – Just 2 tablespoons of sugar add a little bit of sweetness to the muffins. To switch up the flavor, you could use brown sugar instead.
Cinnamon – A teaspoon of ground cinnamon adds the perfect flavor – we never make french toast without it!
Salt – Just a half teaspoon of salt will help all of the other flavors to pop!
Vanilla extract – A teaspoon of vanilla extract adds a little extra flavor to the french toast. I usually add a little extract to my french toast recipes. The higher the quality of the vanilla, the better.
STREUSEL TOPPING
Flour – You will need 1/3 cup of all-purpose flour to help form the crumbly streusel topping.
Brown sugar – For best results, make sure the brown sugar is fresh and moist.
Cinnamon – Just a little bit of ground cinnamon is the perfect addition to the topping. Can’t have too much cinnamon in french toast!
Butter – You will need 1/4 cup (1/2 stick) of butter. Make sure the butter is cold when you add it to the other ingredients so you can cut it in with a fork or pastry cutter. You want the mixture to be crumbly and using cold butter will ensure the correct consistency.
HOW TO MAKE FRENCH TOAST MUFFINS
Preheat the oven to 350°. Grease a muffin pan with cooking spray. Set aside.
Slice sourdough bread into ½ inch cubes. Place in a large bowl and set aside.
MAKE THE EGG MIXTURE
In a medium mixing bowl, beat eggs well. Add milk, sugar, cinnamon, salt and vanilla. Mix well.
Pour egg mixture over bread. Carefully mix to evenly coat all the bread cubes. Let sit for ten minutes to soak in.
MAKE THE STREUSEL TOPPING
In a small bowl, combine the flour, brown sugar and cinnamon for the topping. Cut in butter until you have small crumbles.
ASSEMBLE THE MUFFINS
Scoop bread into muffin tin, then sprinkle topping on each one.
BAKE AND ENJOY!
Place in the oven and cook for 20 minutes. Allow to cool slightly and serve warm.

- ¼ cup butter cold
Instructions

TIPS FOR MAKING FRENCH TOAST MUFFINS
- If you want to save a few calories and reduce the sweetness of the muffins, you can skip the topping. The muffins still taste delicious.
- For a more rich flavor, use half and half or cream instead of milk.
- Add a scoop of vanilla protein powder to the egg mixture to add some extra protein and flavor to the recipe.
- The muffins are absolutely delicious as made, but if you want to add something a little extra, we’ve got a few suggestions. Anything that goes well with french toast will go well with these muffins. Try serving them with warm maple syrup, powdered sugar or berries. Or all of the above!
CAN YOU FREEZE FRENCH TOAST MUFFINS?
You can freeze the muffins, but the streusel topping doesn’t freeze/thaw very well so if you plan to freeze them, leave the streusel off. Bake the muffins and let them cool completely before wrapping in plastic wrap and then in a Ziplock freezer bag. The muffins without the topping can be frozen for up to three months.
