TIME SAVING TIPS FOR MAKING VEGETABLE SOUP:
The hardest part about making this soup is chopping up all of the veggies. The good thing is that there are several ways to save time and make this soup easier to make.
- Chop and freeze veggies. I usually keep a homemade mirepoix blend on hand which takes care of the onions, celery and carrots.
- Use frozen or canned vegetables. Frozen onions are a staple in my freezer, but you could also use frozen carrots and a frozen mixed pepper blend works great as a substitute for all the different varieties of peppers. Canned diced tomatoes work really well as a swap for the required tomatoes in the recipe.
- Use minced garlic. I always, always, always have a big jar of minced garlic in my refrigerator and use it in every recipe that requires garlic. Saves so much time and I can’t really tell a huge difference in most recipes.

Ingredients in Panera 10 Vegetable Soup
Vegetables: You need onions, carrots, celery, red peppers, yellow peppers, poblano peppers, and garlic. The recipe calls for ¼-⅓ cup of each, but you can add more of your favorites or leave out the ones you don’t like.
Oil: Use 2 tsp of olive oil to cook the veggies in.
Seasonings: The recipe calls for ½ tsp salt, ¼ tsp onion powder, ¼ tsp garlic powder, 1 tsp white pepper, 1 tsp rosemary, 1 tsp cumin, 1 tsp paprika and 1 tsp basil.
Cornstarch: Add 1 tsp of cornstarch to thicken up the soup a little bit.
Vegetable stock: You will need 3 cups of vegetable stock. You can swap this out with chicken broth or even beef broth if you want to change up the flavor a little bit.
Tomato paste: Just 2 tsp of tomato paste adds flavor to this dish.
White wine vinegar: 2 tsp of white wine vinegar is required in the soup.
Tomatoes: Use ⅔ cup of chopped tomatoes. You can use canned diced tomatoes instead, just drain them.
Corn: Add in ⅔ cup of frozen or canned corn.
Brown rice: Using ¼ cup of dry brown rice adds some texture and bulk to the soup.
Garbanzo beans: For protein, add ⅔ cup of canned garbanzo beans.
Chia seeds: 2 tsp of chia seeds adds a little superfood power to the soup!
Lime juice: Just 1 tsp of lime juice really intensifies the flavor.
Soy sauce: Adding 2 tsp of soy sauce also adds just that much more flavor to the soup.
Spinach: You need 1 cup of spinach, so don’t forget to cut some up the last few minutes of cooking.

How to make Panera 10 Vegetable Soup
Prep
Prep all the whole vegetables, the onions, poblanos, red, and yellow peppers, tomatoes, celery, carrot, and garlic, by chopping/dicing.
Assemble & cook
In a large pot, combine the olive oil with the celery, carrots, red and yellow peppers, onions, and poblano peppers. Cook the vegetables for about 10 minutes on medium heat, stirring occasionally, until the carrots are slightly softened.
Add the garlic to the vegetable mixture and cook for another minute or two until the garlic fragrance is in the air.
Then add all the seasonings, except the cornstarch, to the sauteed vegetables. Stir to coat them evenly. Cook for another 5 minutes over medium-low heat.
Now add in the cornstarch and stir again until it’s well combined. Pour in the vegetable broth, chia seeds, garbanzo beans, brown rice, tomatoes, corn, tomato paste, and vinegar to the pot. Give it a few good stirs to ensure all the ingredients are well combined.
Simmer
Continue to cook on medium-high heat until the mixture is brought to a boil, stir and then reduce the heat to low, let the soup simmer for 45 minutes. After 45 minutes stir the soup again and let cook for 15 more minutes.
Lastly add in the lime juice, soy sauce, and spinach and stir. Turn the stove back up to medium heat and let the spinach cook and wilt for 10 minutes.
Serve the soup immediately and enjoy!
