Tomato soup is pure comfort food in my opinion. It is one of those foods that I enjoy on a cold day with some crusty French bread. This version comes together in a snap and is so full of flavor, you will be glad you have leftovers. Pair this delicious soup with some French bread or a grilled cheese sandwich and you will have a full satisfying meal!

Tomato Basil Soup Ingredients
Whole Tomatoes: You will need one 28-ounce can of whole peeled tomatoes. You can use whatever brand you like or have on hand. I personally love the Hunt’s brand, San Marzano Style tastes amazing for this soup base.
Broth: Adding in 1 cup of chicken broth will create a lovely soup consistency and add more great flavor.
Brown sugar: Use 1 tablespoon of brown sugar to slightly sweeten the soup with a wonderful depth of flavor.
Onion powder: For more amazing seasoning, add in 2 teaspoons of onion powder.
Basil leaves: You will want to use 8-10 fresh basil leaves in this soup recipe. You can use dried leaves as well if that is what you have available.
Butter: To create a nice rich tasting soup, add in a ¼ cup of butter.
Heavy cream (optional): If desired, drizzle some heavy cream on top of each serving of soup for added creaminess.
How to make Creamy Tomato Basil Soup
Prep
First, lightly drain the can of tomatoes then pour the tomatoes into a large 2 quart bowl. Make sure the bowl can fit in the microwave, that is where it is headed.
Next, add in the broth, brown sugar, onion powder and basil leaves. Gently stir the ingredients together.
Heat
Proceed to cover the bowl loosely, leave some air for the soup to breath while heating. I like to use a paper towel or even a light towel (one that you don’t mind getting dirty with tomato sauce!). Then microwave the soup mixture for 5 minutes on high.
Once it has cooked for the 5 minutes, remove the cover and add in butter. Let the mixture sit for 3-4 minutes, until the butter has completely melted. Stir the soup to combine all the ingredients well.
Puree Soup
After that, puree the soup using an immersion blender for 1 minute. If you do not have an immersion blender, a regular blender will work as well. If needed, blend the soup in two batches using a blender.
Portion the soup into individual serving bowls, garnish with a drizzle of cream (if desired), garnish with a fresh basil leaf.
