For the Cheesecake, you will need:
-Cookies: You will need 18 of the vanilla creme-filled chocolate sandwich cookies. Crush them well so that they can become the pie crust.
-Butter: Use 2 tablespoons of melted butter to help bind the cookie crumbs together for a nice crust.
-Cream cheese: You will need 4 softened 8-ounce bricks of cream cheese for the base of the cheesecake recipe.
-Condensed milk: Using 1 14-ounce can of sweetened condensed milk will sweeten up your cheesecake and keep it thick and smooth.
-Vanilla Extract: Add a little flavor enhancement with 2 teaspoons of vanilla extract.
-Chocolate chips: You will want to use 12 ounces of semi-sweet chocolate chips for a rich chocolate cheesecake flavor. My favorite are the Ghirardelli’s premium baking chips, they are delicious and always have great results.
-Eggs: Using 4 eggs will result in a richer flavor for the cheesecake, all while helping it to leaven properly and bind together well.
For the topping, you will need:
-Chocolate chips: You need 6 ounces of semi-sweet chocolate chips as well as ½ cup of white chocolate chips.
-Heavy cream: Use ¼ cup of heavy whipping cream to get the perfect rich consistency.
-Truffles: Use an assortment of Lindor truffles for a fun flavor combination, whatever your favorite flavor is will be a perfect addition to this dessert.
How to make Chocolate Truffle Cheesecake
Making the cheesecake
Start by preheating your oven to 300 degrees F. Spray your pie pan (best choice is a 10-inch springform pan) with non-stick cooking spray and set aside.
In a medium size bowl, crumble the cookies into small pieces for sand-like texture. Then, add the melted butter to the cookie crumbs and mix until well combined. Next, press into the mixture into the bottom of the prepared baking pan.
Then, in a separate large bowl, beat together the softened cream cheese, sweetened condensed milk, and vanilla extract until well blended.
After than, in a microwave-safe bowl, melt the semi-sweet chocolate chips in 30-second intervals, stirring well between each until smooth.
Then, add the melted chocolate chips to the cream cheese mixture and blend together well.
Now, add in the eggs, 1 at a time, mixing well after each addition until combined.
Lastly, pour the pie filling over your prepared crust.
Proceed to bake in the oven for 1 hour and 5 minutes until the center is almost set.
When the pie is finished baking, run a knife along the rim of the pan to loosen the cake and then let it cool completely before removing the rim.

First, heat up the heavy cream in a small pot on the stove or in a bowl in the microwave until just simmering.
Next, pour the hot cream over the semi-sweet chocolate chips in a bowl and cover. Let this sit for 2 minutes and melt together. Stir until smooth.
Then, pour the chocolate and cream mixture over the top of the cheesecake.
Now it is time to chill! Place the cheesecake in the fridge for 4 hours to chill and set.
Before serving, melt the white chocolate chips in a small bowl in the microwave in 30-second intervals, stirring between each until smooth.
Then, drizzle the white chocolate over the top of the cheesecake for a dramatic affect that gives the cheesecake a very official look.
Add your assorted chocolate truffles to the cheesecake for a final touch.

How do I know when my cheesecake is baked enough?
The center of the cheesecake should still wobble a bit when it is removed from the oven and the edges should appear to be set. The cheesecake will finish cooking and firming up as it cools. If you were to bake the cheesecake until it is no longer wobbly and is firm-looking within the oven, then the top will crack as the cheesecake cools down.
Can I freeze my cheesecake to set it?
As hard as it is to wait a few hours for the cheesecake to cool and set in the fridge I do not recommend trying to speed up the process by placing it in the freezer. This will cause the structure of the cheesecake to not turn out properly as things take time to develop that great texture you’re looking for. Patience is key to a perfectly baked cheesecake.
How long will my homemade cheesecake last?
This dessert will last 3-5 days if stored in an airtight container and kept in the refrigerator. This dish is meant to be served cool, do not keep it on the counter or it will loose it’s amazing texture and not be edible.
