Chocolate Chip cheesecake banana bars
They’re a bar dessert treat much like my Chocolate Chip Banana Bars but made with a simple cheesecake filling and easy banana bread base. Together they create a swirled dessert that looks great and tastes even better.
Ingredients for cheesecake banana bars
-Bananas: We need 1 2/3 cups of mashed bananas (this is about 5 very ripe bananas).
-Brown Sugar: 3/4 cup of brown sugar will keep the banana bread base moist, flavorful, and sweet.
-Oil: We need 1/4 cup of oil (any cooking oil will work) I love to use coconut oil.
-Milk: 1/4 cup of milk will make the batter thinned down just enough to spread into the pan.
-Eggs: We need 2 eggs to help with the leavening texture and to make bind the bars together so that they don’t crumble apart.
-Flour: 1 3/4 cup of all-purpose flour will be the base of the banana bread batter portion of this recipe.
-Baking Soda: We need 1 teaspoon of baking soda to help the banana bread part rise up nicely.
-Salt: 1/2 teaspoon of salt will enhance the flavors in this dish and really make them shine and taste amazing.
-Cinnamon: 1 teaspoon of cinnamon will spice up the banana bread base and make it incredible.
-Cream Cheese: We need 8 ounces (one brick) of softened cream cheese for the cheesecake filling.
-Sugar: With 1/4 cup of granulated sugar we can sweeten the cream cheese.
-Vanilla: We just need 1 teaspoon of vanilla to help enhance the flavors in this recipe and make it taste great.
-Milk : just 1/3 cup regular dairy milk or almond milk adds to the cheesecake filling to make it the perfect texture
How to make cheesecake banana bars
Preheat your oven to 350 degrees F and spray a 15×10.5 baking sheet pan with nonstick cooking spray.
Peel and mash your bananas and place them in a bowl.
Stir in the brown sugar, oil, milk, and eggs until combined.
Add in the dry ingredients and stir again to combine.
Spread the batter into the prepared pan.
In another bowl, mix together the cream cheese, granulated sugar, milk and vanilla.
Drop the cheesecake mix by the dollops onto the banana batter.
Run a knife through the dollops multiple times, swirling the cheesecake around in the pan.
Bake for 25 minutes or until a toothpick can be inserted and come out clean.
Cool completely and then cut into squares. Enjoy!

- 5 bananas very ripe, about 1 2/3 cups
- 3/4 cup brown sugar
- 1/4 cup oil, any type I use coconut
- 1/4 cup milk
- 2 eggs
- 1 3/4 cup flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1 tsp cinnamon
Cheesecake Swirl
- 8 oz softened cream cheese
- 1/3 cup milk
- 1/4 cup granulated sugar
- 1 tsp vanilla
Instructions
- Heat oven to 350 degrees F. Spray a 15×10.5" pan with non-stick spray.
- Peel bananas and mash well. Stir in brown sugar, oil, 1/4 cup milk and eggs until combined. Add in dry ingredients and stir. Spread the batter into the prepared pan.
- In a separate bowl, mix together the cream cheese, 1/3 cup milk, granulated sugar and vanilla. Use a spoon to drop dollops of the cream cheese mixture onto the banana bar batter- I had about 15 dollops total. Run a thin knife through the dollops multiple times, swirling the cheesecake into the batter.
- Bake 25 minutes, until a wooden toothpick inserted in center comes out clean. Cool completely and cut into squares. Enjoy!

HOW CAN I RIPEN BANANAS QUICKLY?
You can make your bananas turn ripe faster by placing them on a parchment lined baking sheet in the oven at 350 degrees F for about 30-40 minutes. Let cool for 1 hour before use. If you have more time on your hands you can also place the bananas in a brown paper bag with an apple. Just close the bag up to seal the air inside and let it sit like this for about a day.
CAN YOU USE FROZEN BANANAS IN BANANA BARS?
Yes, frozen bananas can be used in this recipe, but I recommend thawing and discarding the accumulated liquid in the bag before use. This will allow you to use those frozen bananas without throwing off the wet: dry ratio this dessert needs.
CAN YOU FREEZE BANANA CHEESECAKE BARS?
Yes, these bars could be frozen. I recommend cutting them into small 2-3 inch sized squares and placing them in little baggies or individually wrapping them in plastic wrap before freezing, then when you want to grab a treat, you already have them portioned and can grab as many as you want at once. Perfect for adding to lunch boxes.
