Game Days are pretty important in our house. Between college football, NFL and NBA games, well, we see a lot of them! In my opinion, game day food is just as important as the game itself (don’t tell my husband I said that) so I love creating delicious recipes to enjoy while watching. I made these amazing quesadillas and knew I had to share the recipe- they’re SO good! These aren’t your run-of-the-mill quesadillas either- they’ve got gooey cheese, big chunks of fresh avocado and chicken mixed with salsa, lime and cilantro. They’re great as appetizers, but be prepared with enough- no one can eat just a few bites of these!
To give my quesadillas that fresh-made taste I used TortillaLand tortillas. Have you ever tried them? Fair warning, once you do, you’ll never go back to any other brand, ever! TortillaLand tortillas come uncooked and they taste just like the made-from-scratch ones you get at restaurants. They cook in just 1 minute and, oh my word do they taste good. They have just 5 ingredients and bonus, I can pronounce each one! I bought my 50-ct pack (which comes in 2 stay-fresh packs of 25) at Costco for a great price- grab a pack next time you’re there! Check out more about TortillaLand and see if your local Costco carries them here.
Now, on to the food…
Chicken Avocado Quesadillas
- 4 TortillaLand (soft taco size) flour tortillas
- 2 cups shredded Monterey Jack cheese
- 1 1/2 cups diced cooked chicken
- 1 avocado, sliced in half, then diced
- 2 TBSP green salsa
- dash of lime juice
- salt & pepper, to taste
- cilantro, sour cream and salsa, to top/dip
Cook each tortilla on a 400 degree F skillet for 30 seconds on each side. Set aside.
Combine diced chicken with salsa and lime juice, stir to combine. Add several leaves of cilantro, if desired. (I adore cilantro!) Shake in a little salt and pepper as well.
Reduce skillet heat to about 250 degrees F. Place tortilla on the skillet, then top with 1/2 cup cheese and about 3/4 cup chicken mixture. Add 1/2 a diced avocado, then another 1/2 cup cheese and another tortilla. Gently press down on quesadilla. Cook for about 3 minutes, then flip over and cook an additional 2 minutes, until all cheese is melted. Remove from heat and let stand 1-2 minutes. Slice into triangles with a pizza cutter and serve with sour cream, salsa and additional cilantro.
Makes 2 quesadillas, 4 slices each, 8 slices total.
