Blueberry Lemon Bars add a fun twist to the classic lemon bar recipe. The crust is made with graham cracker crumbs, which is topped with a creamy lemon layer filled with fresh blueberries.
This delicious lemon bar recipe is simple to make and is absolutely amazing with fresh blueberries in it. I’ve swapped out the blueberries with raspberries and/or strawberries and all of these versions are absolutely incredible.

INGREDIENTS IN BLUEBERRY LEMON BARS
GRAHAM CRACKER CRUST
Graham cracker crumbs – You will need about 1 1/2 cups of graham cracker crumbs. You can buy pre-crushed graham cracker crumbs if you’d like, or you can crush your own. You will need 12 full sheets of graham crackers. It is easiest to crush them in a blender or food processor.
Butter – You will need 1/3 cup of melted butter to mix with the crumbs to form the crust.
Sugar – Just 2 tablespoons of sugar will help to add a little extra sweetness to the crust.
Lemon zest – A teaspoon of lemon zest adds a subtle lemon flavor to the crust.
LEMON BLUEBERRY FILLING
Sweetened condensed milk – A 14 ounce can of sweetened condensed milk provides the base for the lemon filling.
Egg yolks – You will need 2 egg yolks to make the lemon filling thick and creamy.
Lemon juice – The recipe calls for 1/3 cup of lemon juice. You can use the kind from a bottle, or you can squeeze your own! You will need about 2-3 lemons, depending on the size.
Lemon zest – You’ll need another teaspoon of lemon zest for a more intense lemon flavor in the filling.
Blueberries – Add 1 cup of fresh blueberries to the filling. Fresh blueberries definitely work best, but you can use frozen if needed. Just make sure they are thawed and pat them dry before adding to the filling. You can also swap out the blueberries with fresh raspberries or chopped strawberries. Or even a combination of berries! All berries taste delicious with lemon!
HOW TO MAKE BLUEBERRY LEMON BARS
Preheat oven to 350°F. Spray an 8-inch square baking pan with non-stick cooking spray or line with parchment paper and set aside.
Add the graham cracker crumbs, melted butter, granulated sugar and lemon zest to a large mixing bowl. Mix until well combined. Press the mixture into the base of the prepared baking tin. Bake for 10 minutes, then set aside to cool.
Once the base has cooled, make the filling by adding the sweetened condensed milk, egg yolks, lemon juice and lemon zest to a large mixing bowl. Mix until smooth and well combined. Use a spatula or large spoon to fold in the blueberries.
Pour the filling mixture over the cooled base. Bake for a further 15 minutes, or until the filling has set.
Allow to cool completely in the pan, before placing in the fridge to cool for at least 30 more minutes.
Remove the lemon bars from the baking pan, then slice and serve.

ARE THESE BLUEBERRY LEMON BARS GLUTEN FREE?
Good question! They definitely can be if you use gluten-free graham crackers for the crust. Sometimes I’ve been able to find the Simple Mills brand at Costco, but most stores have at least one brand of gluten-free graham crackers.
DO LEMON BARS NEED TO BE REFRIGERATED?
Yes. Lemon bars need to be kept stored in the fridge until you’re ready to eat for food safety reasons. That said, if you plan on serving them on the same day, they can safely be held at room temperature for up to a few hours.
HOW LONG CAN YOU KEEP BLUEBERRY LEMON BARS?
Lemon bars can last up to 4-5 days if kept safely stored within the fridge. Keep them covered or in an airtight container to avoid the risk of them drying out and become hard and chewy. If you’d like them to last longer, lemon bars can be frozen for up to a few months. I recommend freezing in solid single layers or in individually wrapped pieces so it’s easier to grab and eat. To thaw you can place them on the counter or in the fridge overnight.
HOW TO ZEST A LEMON
You can also add a little more lemon flavor to the recipe by adding some lemon zest to the filling and/or the topping.
Don’t be intimidated about getting the zest from a lemon – it’s really easy! And fresh lemon zest adds such an amazing lemon flavor to recipes!
Lemon zest is just tiny pieces of the outside of the peel of a lemon. I just use the small side of a regular cheese grater – as long as the holes are tiny, it will work just fine. You can also use a citrus zester like this one if you prefer! Either way, make sure to just grate the darker yellow outer layer of the lime peel. Once you have revealed the lighter part of the peel underneath, rotate the lemon and start grating another part of the outer layer.
HOW MUCH LEMON ZEST IS IN ONE LEMON?
A medium sized lemon will yield about 1 tablespoon of lemon zest. You only need 2 teaspoons for this recipe, so if you use one lemon, you will have plenty leftover or you can just add a little bit of extra for more lemon flavor!
