What are Rocky Road Fudge Bars?
These delicious dessert bars have a chocolate cookie crust and then a cheesecake layer in the middle that is topped with marshmallows and a creamy chocolate layer on top. Even though there are 3 layers, these bars are pretty simple to make and they taste a little bit like cheesecake, but a little bit like fudge too!
Ingredients in Rocky Road Fudge Bars
LAYER 1
Butter – You’ll need 1 stick (1/2 cup) of butter to melt with the chocolate. Real butter works the best!
Chocolate – You’ll need 1 square of unsweetened chocolate, which is equal to 1 ounce. You can find unsweetened chocolate in the baking aisle near the chocolate chips.
Sugar – Don’t forget the sugar! All you need is regular granulated sugar to sweeten up the crust layer.
Eggs – You’ll need 2 large eggs.
Flour – Regular all-purpose flour works great, but you can also use cake flour.
Baking powder – Make sure your baking powder isn’t old or expired.
Almonds – You’ll need 1/2 cup chopped almonds for this first layer. If you don’t like almonds, you can use pecans or walnuts instead.
Vanilla extract – The higher the quality of the vanilla, the better.
LAYER 2
Cream cheese – This layer calls for 6 ounces of softened cream cheese. It works well because the next layer requires 2 ounces and bricks of cream cheese are 8 ounces, so you’ll end up using the entire brick. I love it when things work out perfectly like that! Any type of cream cheese is fine – you can use regular cream cheese or a light or non-fat variety.
Sugar – More sugar! Gotta sweeten this layer up a little bit.
Egg – One more egg for this layer.
Vanilla – Again, the higher the quality, the better.
Butter – You only need 1/4 cup for this layer, but make sure it is softened to room temperature before mixing in with the other ingredients.
Flour – You just need 2 tablespoons of all-purpose flour to thicken up this cheesecake layer a little bit.
Almonds – This layer calls for another 1/4 cup of chopped almonds. You can swap in a different type of nut if you prefer.
Semi-sweet chocolate chips – You’ll need 6 oz (3/4 cup) of semi-sweet chocolate chips.
LAYER 3
Marshmallows – You’ll need 2 cups of mini marshmallows.
Butter – This layer calls for 1/4 cup butter, so you can use the other half of the stick that you used for the second layer.
Chocolate – You’ll need another square of unsweetened chocolate.
Cream cheese – Use the remaining two ounces of cream cheese from the brick that you used in the second layer. Make sure it is softened before adding.
Milk – You’ll need 1/4 cup milk – any kind of milk should work fine!
Vanilla – More vanilla extract!
Powdered sugar – You’ll need 3 cups of powdered sugar for this layer.
How to make Rocky Road Fudge Bars
Preheat oven to 350°.
To make the first layer, melt butter and chocolate together (microwave or stove) and then add sugar, eggs and other dry ingredients. Mix until well combined and then pour into a greased 9X13 pan.
Make the second layer by mixing the cream cheese, sugar, egg, vanilla, butter and flour. Beat until fluffy, then spread over the chocolate mixture in the pan. Sprinkle nuts and chocolate chips over top. Bake for 25-30 minutes.
Remove from oven and sprinkle marshmallows over the top. Bake for 2 more minutes, or until marshmallows are puffed up.
Have the third layer ready before removing pan from oven. Melt the butter and chocolate together (either in the microwave or on the stove) and then add the other ingredients, mixing until well combined. Pour over top of the marshmallows and then use a knife to swirl the chocolate and marshmallow together. Refrigerate and then cut into bars.

- 6 oz cream cheese softened

- 1 egg
- ½ tsp vanilla
- ¼ cup butter softened
- 2 Tbsp flour
- ¼ cup chopped almonds
- 6 oz. semi-sweet chocolate chips (3/4 cup)
Layer 3
- 2 cups mini marshmallows
- ¼ cup butter
- 1 square unsweetened chocolate
- 2 oz cream cheese softened
- ¼ cup milk
- 1 tsp vanilla
- 3 cups powdered sugar
Instructions

What type of nuts to use in Rocky Road?
Traditionally, Rocky Road ice cream has almonds in it and that is what we use in this dessert recipe. Sometimes people swap in pecans or even walnuts instead – you can use whatever nuts you prefer!
