No Bake Peanut Butter Banana Fudge Bars
I adapted this great no-bake dessert bar recipe from an old cookbook I have and we love the results! It’s a sweetened oatmeal mixture layered with bananas and then given a chocolate peanut butter fudge on top. The addition of banana is wonderful and it pairs perfectly with peanut butter and chocolate.
Peanut Butter Banana Fudge Bars Ingredients
-Banana: You will need 1 banana for spreading in between the layers.
-Butter: Use 1 stick (1/2 cup) of butter to make the oat mixture taste rich and delicious.
-Brown sugar: You will need 1/2 cup of packed brown sugar for a sweet oat mix.
-Oats: Use 2 1/4 cups of oats. You can use rolled oats, old-fashioned, or even quick-cook depending on how chewy you want these bars to be.
-Chocolate chips: Use 1 cup of semi-sweet chocolate chips for your homemade fudge layer.
-Peanut butter: You will need 1/2 cup of creamy peanut butter for adding flavor to the wonderful fudge.
How to Make No-Bake Peanut Butter Banana Fudge Bars
Spray an 8×8 square pan with non-stick spray or line it with parchment.
In a microwaveable bowl, combine the butter with the brown sugar.
Microwave on high for 2 minutes 30 seconds.
Add in the oatmeal and stir. Return to the microwave for another 2 minutes.
Stir in the vanilla extract. Measure out about 3/4 cup of the oat mixture and press the remaining mixture into the 8×8 pan.
Slice banana and spread around on top of the oat mixture.
Combine chocolate chips and peanut butter and microwave on high for 2 minutes. Stir until combined and spread over bananas.
Sprinkle the remaining 3/4 cup oats onto the chocolate.
Refrigerate 2-3 hours. Cut into squares and enjoy!
How can I make these bars healthier?
Here are several things you can do to cut down on sugar & fat, to make this recipe a bit healthier:
- Reduce butter from 1/2 cup to 1/3 cup , which is 5 TBSP.
- Reduce brown sugar to 1/4 cup, or use a sugar substitute instead.
- Reduce chocolate chips to 2/3 cup.
By doing these 3 things, you can reduce each serving to 189 calories (a 50 calorie decrease), 12 g fat and just 8 grams of sugar!
Can I use a different Nut butter?
If you can’t have peanut butter, you can use any type of nut butter in its place! Many nut butters can have a softer consistency, compared to peanut butter, but the chocolate and oats should work to hold it into bar shape.
NO-BAKE PEANUT BUTTER BANANA FUDGE BARS
Ingredients
- 1 banana
- ½ cup butter 1 stick
- ½ cup brown sugar packed
- 2 ¼ cup oats old fashion or quick cook
- 2 tsp vanilla
- 1 cup semi-sweet chocolate chips
- ½ cup peanut butter
Instructions
- Spray an 8×8 square pan with non-stick spray or line it with parchment. (I adore using the dual foil-parchment paper as it molds nicely to pans but still provides the non-stick awesomeness of parchment paper!)
- In a microwaveable bowl, combine butter with brown sugar. Microwave on high for 2 minutes 30 seconds.
- Add oatmeal, stir and return to the microwave for an additional 2 minutes.
- Stir in vanilla. Measure out about 3/4 cup of the oat mixture and press remaining mixture into the 8×8 pan. Slice banana and spread around on top of the oat mixture.
- Combine chocolate chips and peanut butter and microwave on high for 2 minutes. Stir until combined and spread over bananas. Sprinkle remaining 3/4 cup oats onto the chocolate. Refrigerate 2-3 hours. Cut into 16 squares and enjoy!
- Store any remaining bars in the fridge.

How long are no bake peanut butter banana fudge bars good for?
