Popcorn is one of our favorite treats! It’s quick and easy to make, there are endless variations, and everyone loves it!
S’MORES POPCORN
S’mores Popcorn is made by melting chocolate and mixing it with popcorn before cooling and adding Cinnamon Toast Crunch and mini marshmallows. The whole recipe can be made in the microwave – no stove is needed. Quick and easy snack or dessert that is a hit for after-school or parties.
Ingredients in S’mores Popcorn
Popcorn – You will need 10-12 cups of popped popcorn. This is about the amount that is in one bag of microwave popcorn. If you air-pop popcorn or make it on the stove, you will need about 1/2 cup of popcorn kernels.
Chocolate – The easiest way to add chocolate to the recipe is to use 8 ounces of chocolate almond bark. Almond bark melts easily and is perfectly smooth, but you can use 8 ounces of any type of chocolate you’d like.
Cinnamon Toast Crunch – Adding a cup of Cinnamon Toast Crunch cereal will provide the sweet, crunchy, cinnamon graham taste to the s’mores popcorn. You can use Honey Grahams instead if you aren’t a fan of cinnamon.
Mini marshmallows – You can’t make anything “s’mores” without marshmallows! The recipe calls for a cup of mini marshmallows, but you can definitely add a few more if you’d like.
How to make S’mores Popcorn
Start by popping your popcorn. You can air-pop popcorn or make it on the stove, or just use a bag of microwaveable popcorn. If you do use microwave popcorn, use plain popcorn (no butter, but a little bit of salt is fine). Place the popped popcorn in a large bowl.
Next, melt down your almond bark in the microwave. Microwave the chocolate in 45-second intervals, stirring in between each interval until completely melted.
Pour melted chocolate into the popcorn and stir gently until the popcorn is evenly coated.
Pour out on a baking sheet lined with parchment paper. Spread out and let dry completely (about 20-30 minutes).
Break apart if needed and pour coated popcorn into a bowl.
Mix in Cinnamon Toast Crunch and mini marshmallows.
Serve immediately or bag up and enjoy! Perfect for packing lunches or taking camping.

WHAT KIND OF POPCORN DO YOU USE TO MAKE S’MORES POPCORN?
You can use microwave popcorn, air-popped popcorn, or you can use my favorite stove-popped popcorn that is made with coconut oil. Microwave popcorn may be a little easier, but once you make popcorn on the stove, you’ll realize just how easy it is…and it tastes better too!
HOW DO YOU MAKE POPCORN ON THE STOVE?
I used to just use a large stockpot to make popcorn on the stove (which works great!), but I recently got this popcorn maker and it makes the whole process even easier. The popcorn cooks perfectly every time. To make popcorn on the stove:
- Put 1-2 Tbsp of coconut oil in the stovetop popcorn maker or in your stockpot. If you are using a stockpot, make sure you have a lid!
- Turn the heat on medium high and add about 6-7 “test” kernels to the pot. Put the lid on and wait for the kernels to start popping.
- As soon as the test kernels start popping, you can add the rest of the popcorn kernels. 1/8 cup of popcorn kernels will yield about 4 cups of popped popcorn, so you will want about 1/4 cup of kernels to make 8 cups of popped popcorn. I usually do a little bit extra though, it doesn’t have to be exact!
- Replace the lid and either continuously stir the handle on the stovetop popcorn maker or periodically shake your stockpot to prevent the kernels from settling in one spot and burning. As soon as the popping starts to slow down significantly, remove the pan from the heat. That’s it!
