Snickers Popcorn
I am a stay-at-home Mom to 5 kids, so each and every day is very busy. I try not to over-schedule our days and I like to leave a lot of time to play, but even still, by early afternoon I am exhausted. Over the years I have decided I am just a better mom when I get enough of 2 things: sleep and food. So when my feet start dragging and I begin to feel impatient and cranky, I do a quick assessment. Did I get enough sleep last night? Is my blood sugar tanking? Do I need a snack? Chances are I answer a resounding YES to at least one of those questions, so I take a moment and do what I can do to charge before what I call the “afternoon rush.
My answer for all of this? A fun after-school SNACK! Today it is all about SNICKERS® Peanut Butter Popcorn. I used Snickers Almond in my popcorn, but I also like Snickers Peanut Butter or Snickers Extreme in it. Take a few minutes, sit down and enjoy a delicious snack to give you a boost before the afternoon rush. It is so fun to hear about your kids’ day and just connect with them. SNICKERS® Peanut Butter Popcorn Ingredients
Popcorn: You will need 1 bag of microwave popcorn, or ¼ cup popcorn if you use an air popper like I do.
Corn syrup: Adding in ½ cup of corn syrup to help sweeten this recipe up wonderfully.
Peanut butter: Use a ¼ cup of creamy peanut butter to give the popcorn coating amazing flavor.
Vanilla extract: Using 1 teaspoons of vanilla extract will help enhance all the great flavors in this recipe.
Snickers candy: You will want to add in 1 cup of chopped SNICKERS® candy for a perfect chewy and chocolatey addition to this snack.
Optional: If desired, you can add in ¼ cup salted peanuts and ¼ teaspoon of salt.
Step by step on how to make SNICKERS® Peanut Butter Popcorn
Prep
Start by popping the popcorn in the microwave or an air popper, then transfer it into a large bowl and throw away any un-popped kernels.
Also, chop the Snickers candy bar into small chunks and set aside.
Candy coating
In a small saucepan, combine the corn syrup and peanut butter, cook over medium heat, whisk gently until smooth and completely melted. The mixture will begin to bubble up slightly, allow it to gently boil for about 3-4 minutes, then remove from heat. Proceed to add in the salt and vanilla extract, stir to combine.
Assemble
After that, pour the mixture over the popcorn and gently stir to coat the popcorn with the melted peanut butter mixture.
Next, add in the candy pieces and peanuts (if desired). I like to add in half the chopped SNICKERS bars, give it several stirs to mix, then add the other half.
Serve immediately and enjoy!

HOW LONG WILL CANDY COATED POPCORN STAY FRESH?
Unlike many other recipes where the homemade versions don’t last nearly as long as the store bought counterparts, peanut butter popcorn made at home lasts about as long as the store bought version. You can expect your popcorn to last up to 3-4 weeks if properly stored, but we have always eaten it long before that timeframe was up.
HOW DO YOU STORE CARAMEL POPCORN?
Keep your cooled peanut butter popcorn inside of an airtight container or large resealable plastic bag. You can keep it at room temperature for up to 3-4 weeks this way, but I recommend eating it much sooner than that.
CAN I FREEZE CANDY COATED POPCORN?
Something not many people know is that you can freeze popcorn. Just make sure to keep it in its airtight container and it should be able to hold up well for a 3-4 months. Technically the popcorn isn’t even “frozen”, it is just very chilled and it helps the popcorn last longer.

Love this! We make ‘flavor coated’ popcorn for weekend movie night at home. For this recipe I used 1 6oz bag of peanut butter chips and 1 6oz bag white chocolate chips. Melt the chips until smooth and pour over popcorn, gently stir to combine then continue with recipe. I also like to chop the candy bars in my food processor.
