I have to say, this is one of my favorite muffin recipes ever. They were so simple to make and I love the texture. Oh and the flavor is simply amazing! My whole family agrees that these muffins are SO delicious. Who knew that adding oats to a basic muffin recipe would make them that much better?!
Here is a tip about making muffins- do not use a mixer of any sort. Just stir the ingredients up by hand and and don’t worry if every little morsel is well mixed in. The muffins rise higher when baked when you mix them by hand! Then, add the delicious oat topping and you will love the bakery-look of these homemade muffins.
TIPS AND TRICKS FOR AMAZING MUFFINS!
To help you create the most sensational and delicious muffins you have ever tasted, here are a few tips!
- One of the most important rules for making muffins is to not over mix the batter. You want to mix until just combined, try to resist the urge to stir the batter until it is lump free. For the best results, you want the batter to be a bit lump and thick.
- Another great tip to follow is mixing the wet and dry ingredients separately. This step helps prevents the batter from being over mixed. When you add the dry ingredients to the wet, each have already been mixed and you will not need to stir very much to combine them all together.
- After the muffins have been bake, be sure to let them cool in the muffin pan for about 5 minutes. This is a great rule to follow, especially if the muffins are not in a paper lines. Letting them cool will prevent them from falling apart as you remove them. But, remove them after the 5 minutes because they could get soggy in the pan if left to cool too long.
INGREDIENTS IN BLUEBERRY OATMEAL MUFFINS
Flour – All-purpose flour works best in this recipe. You can swap it out with a gluten-free substitute if needed. You can also use wheat flour or oat flour, but the consistency of the muffins will be more dense.
Oats – The recipe calls for rolled oats, but you can use quick oats if you prefer.
Brown sugar – Brown sugar provides the sweetness in the muffins. For best results, make sure the brown sugar is fresh and soft.
Baking powder – This is the leavening agent in the muffins. For best results, make sure your baking powder isn’t old or expired.

HOW TO MAKE BLUEBERRY OATMEAL MUFFINS
Preheat oven to 400°. Line 12 muffin cups with liners or grease the bottoms of each muffin well.
In a large bowl, combine flour, oats, brown sugar, baking powder, cinnamon and salt.
In a small bowl, whisk egg, milk and oil together.
Add to the dry ingredients and stir just until barely combined. Do not over mix!
Fold in the blueberries.
Pour batter into prepared muffin cups (each should be about ¾ full).
Mix topping ingredients together and sprinkle evenly over the batter.
Bake for 18-20 minutes or until golden brown. Let the muffins cool in the pan for about 5 minutes before removing the muffins from the pan and letting them cool on a wire rack.
