I am always trying to find ways to get more protein in my diet and to keep my meals and snacks balanced. There’s always eggs and chicken, but sometimes you are just in the mood for baked goods. And if you can have a muffin that is also packed with protein and tastes good? Total win!
DO HIGH PROTEIN MUFFINS TASTE GOOD?
I’m going to be completely honest. If you are expecting this muffin to taste like a full-fat muffin from your favorite bakery, you may be a little disappointed. These muffins are much more dense (there’s a lot of Greek yogurt in there!) and the texture is different from a light and buttery muffin.
But I also think that you will agree that these muffins are pretty delicious, especially considering that each muffin has 12 grams of protein and only 7 grams of fat! I am very picky about high-protein snacks and bars and I was pleasantly surprised by these muffins. My whole family loves them and we’ve made them many times.
High Protein Double Berry Muffins
High Protein Muffins are made with Greek yogurt, Kodiak pancake mix, egg whites, protein powder and oats. Add in raspberries and blueberries to make a delicious muffin that is low in fat and high in protein. Healthy muffins that are moist, soft and sweet!
INGREDIENTS IN HIGH PROTEIN DOUBLE BERRY MUFFINS
Butter – You will need 1/2 cup (1 stick) of butter for this recipe. Real butter works best. I haven’t tried this recipe with coconut oil, but I intend to because I think that would be a great swap.
Brown sugar – The original recipe called for 2 cups of brown sugar, but I think the muffins are plenty sweet with just one, especially since the protein powder adds more sweetness. I have not experimented with any brown sugar replacements like Swerve or Truvia, but generally have good luck swapping those out in baking and it saves a lot of calories!
Applesauce – Just 1/4 cup of applesauce helps to provide more moisture for the muffins without adding any fat. You could use butter instead if you prefer.
Vanilla protein powder – Adding 3 scoops of vanilla protein powder adds 3 more grams of protein per muffin. You don’t have to add this, but I think the flavor and added protein is a plus!
Egg whites – Using 4 egg whites will help to bind everything together without adding more fat. You could use 2-3 whole eggs as a swap.
Vanilla Greek yogurt – You will need 2 cups of vanilla Greek yogurt for the recipe. You can use plain yogurt if you’d like, but if you do, I would add 1-2 teaspoons of vanilla extract to the recipe for more flavor. You could even use strawberry or another flavor if you want to change things up a little bit!
Kodiak buttermilk pancake/waffle mix – This high protein pancake mix is used in place of flour for added protein. There are other brands of high protein baking mixes and I’m sure they would work fine too! Kodiak just happens to be the kind that I can buy in bulk at Costco and we go through a lot of it! There are a lot of varieties of Kodiak mix – they have gluten free mixes, low-carb mixes, etc. They should all swap in interchangeably in this recipe.
Oats – I love oats to muffins and cookies, and they are delicious in this recipe. You can use old-fashioned or quick oats, depending on your preference. Old-fashioned oats are a little bit chewier. I recently found some “protein oats” that are also made by Kodiak, so you could use those for a little more protein in each muffin.
Berries – You will need 2 cups of berries for the recipe (although I like to add a few extras)! I prefer to use fresh berries, but frozen berries work well too. I used 1 cup of raspberries and 1 cup of blueberries but you could use any berry or combination of berries. You could even leave them all out and use chocolate chips instead!
HOW TO MAKE HIGH PROTEIN MUFFINS
Preheat oven to 375°. Prepare 2 muffin tins by filling them with paper muffin liners or spray the pans with non-stick cooking spray. You’ll actually only need to prepare 18 of the muffin cups, not all 24.
Melt butter and mix it together with the brown sugar and protein powder. Add the applesauce and stir in.
In a separate bowl, use a hand mixer to beat the egg whites until stiff. This should take about 3-4 minutes. Fold in the yogurt and gently mix just until combined.
Add the butter/brown sugar mixture and use a spoon to mix just until combined.
Fold in the Kodiak mix and the oats and mix just until combined.
Gently fold in the berries. Scoop batter into the prepared muffin tins. I like to use a muffin scoop (large cookie scoop) to evenly portion the batter, but you can use a spoon to fill the muffin pans. Each muffin cup should be about 2/3 full.
Bake for 25 minutes or until a toothpick inserted in the middle comes out clean. Let cool in the pan for about 5 minutes and then transfer the muffins to wire racks to cool completely.

DO I HAVE TO ADD PROTEIN POWDER TO HIGH PROTEIN MUFFINS?
I like adding protein powder to baked goods because it is an easy way to add some flavor, sweetness and usually a few grams of protein to each serving. If you don’t like protein powder or don’t have on hand, you can definitely make these muffins without it. The amount of protein in each muffin will be about 9grams which is 3 grams less per muffin. The recipe calls for vanilla protein powder which also adds some sweetness and flavor, so if you leave it out, I would add a little bit of vanilla extract and maybe a little bit of extra brown sugar too.
Do I have to use Kodiak pancake mix in High Protein Double Berry Muffins?
Kodiak pancake mix is great to use in place of flour and leavening agents in baked goods because it has added protein. It adds just about 2.5 grams of protein per muffin. If you don’t have Kodiak mix, you can swap it out with 2 cups of regular flour, but make sure to add 2 teaspoons of baking powder and 1 teaspoon of baking soda.
Other varieties of High Protein Muffins
These muffins are delicious with blueberries and raspberries, but you can swap out the berries if you’d like. You can add strawberries or blackberries – all the berries are delicious! Or you can leave out the berries, and add some cinnamon and chopped apples. Or you can leave out all the fruit and throw in some chocolate chips instead!
HOW CAN I PREVENT MY MUFFINS FROM STICKING TO THE PAN?
To help keep your muffins from sticking to the pan, I suggest doing one of two things. First, you can use mini muffin liners for this recipe. Seconds, you can spray your muffin tin with non-stick spray that includes flour. This spray is specifically for baked goods and works so well! I never have my baked muffins stick to the pan again!

Hello, The recipe sounds really good due to the protein content.
QUESTION: since scoops can vary in size could you please give a more exact amount of protein powder amount? Either in tablespoons or (for example) 1/4 cup would be much clearer in the recipe. Thanks. Mary Ellen
