Halloween is almost here! These goulish cookies are a cute, easy addition to your costume party menu. Made with large marshmallows and premade sugar cookie dough, these 3D ghost cookies are spooky good.
If you’re looking for a simple spooky treat to make then these have got to be it. Make these Pillsbury Halloween ghost cookies in celebration o the upcoming holiday or just make them “just because” and let your kids think you’re the coolest mom on the planet. Because you are, right?! Right.
Making 3D Ghost Cookies
This unique and easy sugar cookie recipe is one that I love, not just because of how simple it is to make but also because it’s not often that you see ghosts popping out of cookies like this. I mean, I have a Halloween Ghost Cookie Recipe and it looks nothing like this one!
Can I use homemade sugar cookies instead?
Absolutely! In fact, I have a great recipe right here that you can use if you don’t want to use the Pillsbury premade sugar cookie dough. It will take you a little longer to make this cookies recipe by making your own sugar cookies, but then you can say they’re homemade.
Could I just use white chocolate instead of a frosting?
You know, I’m willing to bet that you could, but I have never personally tried. The chocolate will of course set up and give you a matte finish but could add a nice amount of sweetness and bite to the cookie. If you try this method, let me know in the comments how it goes because I’m truly curious!
3D Ghost Cookies Ingredients
-Cooked and cooled sugar cookies
-18-24 large marshmallows
White Frosting
-2 cups powdered sugar
-1/3 cup melted plain shortening {don’t use the butter flavor variety- you want this to stay white!}
-3-5 TBSP hot water
Black Frosting
-1/2 cup powdered sugar
-2 TBSp melted butter
-1/8 tsp Wilton black coloring
How to Make 3D Ghost Cookies
Cook your sugar cookies, trying to leave some uneven edges. The operative word here is TRY. You can see how I tried to shape my cookies above. And now look below- they smoothed out like they weren’t even shaped at all. It’s OK, they’ll still look good! Put them to cool on a cooling rack.
Whisk together the ingredients for the white frosting. If you have meringue powder, you can use that in place of the shortening but I didn’t have any on hand. Shortening works well- just put the 1/3 cup in a bowl and microwave it until it’s melted. Then whisk together with the sugar and water, adding additional tablespoons of water until the frosting is smooth and runny enough that it drips off the whisk easily.
Now that you have the white frosting done, let’s melt the marshmallows a bit so that they meld to the top of the cookie. I sprayed a silicone baking mat, but you can just spray a plate with cooking spray and use that instead if you don’t have a mat.
Marshmallow is sticky and you don’t want them to stick to whatever it is you’re melting them on, so use a good amount of non-stick spray. Set the marshmallows out with an inch or two between them. Put them in the microwave and heat them just until they begin to puff up, about 15-20 seconds.
Spray a rubber scraper and use that to quickly transfer the melted marshmallows off the mat and onto your cookies. This is much easier than it sounds- it took all of 30 seconds to transfer all of them.
Now we frost the cookies. This is the easy part! Grab a spoon and just spoon the white frosting over the top of the marshmallow on the cookies. The idea is to cover it completely, and have frosting on the entire face of the cookie. Some will run off. If you don’t want to make a frosting mess, put a cutting board or something under the cooling rack that the cookies are on, to catch the frosting as it runs off.
Whisk together the ingredients for the black frosting. Now use a rubber scraper to transfer that frosting to a small ziplock baggie. Once the ghost cookies have sat about 10 minutes or so, snip a tiny part of one corner of the black frosting bag and frost eyes and a long mouth. Let the frosting dry, then just use your finger to pat down any point edges to the eyes/ mouth.

Instructions
- Cook your sugar cookies and try to leave some uneven edges. Place on a cooling rack to cool completely.
- Whisk together the ingredients needed for the white frosting until the frosting is smooth and runny enough that it drips off a whisk easily.
- Slightly melt the marshmallows by placing them on a silicone mat or plate and sticking them in the microwave for about 15-20 seconds, or until they puff up. It's a good idea to spray the plate with nonstick cooking spray to avoid a sticky mess. Make sure there's at least an inch or two between them as they will expand.
- Spray a rubber scraper and use that to quickly transfer the melted marshmallows off the mat and onto your cookies.
- Grab a spoonful of white frosting and drizzle it over the marshmallow topped cookie. Try to completely cover the marshmallow so that it's hidden. Some of the frosting will drip off of the cookie, this is okay.
- Whisk together the ingredients for the back frosting and transfer it to a Ziplock bag. Snip the corner end and pipe the frosting onto the cookie. Make two eyes and a large mouth. Let the frosting dry and pat down any lumps with your finger. Voila! 3-D Ghost Cookies!

Can I freeze these ghost cookies?
You could. But, when thawing the cookies the icing will get a little melty (for lack of a better word) and cause the color from the black icing to run into the white giving you a less than desirable appearance.
How long are 3D ghost cookies good for?
If you keep them sealed in an airtight container you can get them to last up to a week and still be great. After that, you may notice them drying out or the marshmallows becoming stale.
