We love waffles. It’s the perfect excuse to have dessert for breakfast. And these sugar cookie waffles are especially sweet. The liquid in the waffle batter comes from sugar cookie coffee creamer – crazy, right? You can make a simple sugar cookie-flavored frosting for the waffles with more creamer and powdered sugar. The waffles have so much flavor that you don’t even need syrup!

SUGAR COOKIE WAFFLE VARIATIONS
One of the best things about this recipe is how easy it is to change up the flavor. Since the sugar cookie flavor comes from the sugar cookie coffee creamer, all you have to do is use a different flavor of coffee creamer to change the flavor of the waffles. You can use Caramel Macchiato, French Vanilla, Hot Chocolate Marshmallow, Peppermint Mocha, Vanilla Caramel….they are all delicious!

INGREDIENTS IN SUGAR COOKIE WAFFLES
Flour – All-purpose flour works best.
Baking powder – This is the leavening agent in the waffles, so for best results, make sure the baking powder isn’t old or expired.
Vanilla extract – The higher the quality of the vanilla, the better.
Butter – Real butter works best. Melt the butter and let it cool for at least 5-10 minutes before adding to the other ingredients.
Sugar Cookie Coffee Creamer – The coffee creamer gives the waffles the delicious sugar cookie flavor and also provides most of the liquid for the batter. Feel free to switch the flavor if you want! You will need a few extra tablespoons to make a delicious glaze for the waffles.
Eggs – Two large eggs will bind all of the other ingredients together.
Christmas sprinkles – Some of the sprinkles will be mixed into the waffle batter, but you can add more on top too.
Powdered sugar – Mix the extra creamer with powdered sugar to make a sweet glaze for the waffles.

HOW TO MAKE SUGAR COOKIE WAFFLES
Spray a large waffle iron with non-stick cooking spray and turn it on to preheat. Set aside.

Whisk the dry ingredients together in one bowl and then add the other ingredients. Whisk just until combined and smooth before folding the sprinkles in.

Pour ½ cup of batter onto the preheated waffle iron and cook the waffle for about 2-3 minutes or until golden brown. Repeat until all the batter is used up.

Mix the powdered sugar and extra coffee creamer together until smooth and drizzle over the waffles before topping with whipped cream and extra sprinkles!

- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 2 teaspoons vanilla extract
- ⅓ cup butter melted and cooled
- 1 ½ cups plus 3 tablespoons, sugar cookie coffee creamer
- 2 large eggs
- ¼ cup Christmas sprinkles of choice plus extra for topping
- 1 cup powdered sugar
Instructions
- Spray a large waffle iron with non-stick cooking spray and turn it on to preheat. Set aside.
- Add the flour and baking powder to a large mixing bowl and whisk to combine.
- Add the 1 ½ cups coffee creamer, eggs, vanilla, and melted butter to the mixing bowl and whisk until all ingredients are fully incorporated and the batter is smooth.
- Add the sprinkles to the batter and stir gently until just combined.
- Pour ½ cup of batter onto the preheated waffle iron and cook the waffle for about 2-3 minutes or until golden brown. Repeat until all the batter is used up.
- Add the powdered sugar and three tablespoons of coffee creamer to a small mixing bowl and mix until smooth.
- Drizzle the icing over the waffles and top with whipped cream and more sprinkles if desired.

My waffles always seem to stick to the waffle iron. How can I fix this?
I spray liberally with non-stick spray in between each and every waffle. If that still doesn’t do the trick it might be time for a new waffle iron. This is the waffle iron I have and love.
Can I make waffles ahead of time and then reheat?
While the waffles taste best hot right off the iron, you can make them ahead and keep them in the refrigerator for a few days and then reheat them in the oven, toaster, or microwave if needed. I prefer to reheat them in the toaster because they taste fresher that way!
Another thing that I like to do is double (or triple) the batter and then I can keep it in the refrigerator for a 2-3 days so that I can make “fresh” waffles for several days without having to pull out all of the ingredients again!

Can waffles be frozen?
This waffle recipe freezes wonderfully. Make the waffles in the waffle maker and then cool them completely before freezing them. You can place 4-6 waffles in a Ziplock freezer bag and store them in the freezer for up to a couple of weeks. If you want to store them longer than that, wrap each one in plastic wrap before placing it in the Ziplock bag to freeze.
To reheat the waffles, I prefer to toast them in the toaster because it brings back some of the crispiness. You can also heat them in the oven or the microwave.
ARE SUGAR COOKIE WAFFLES A DESSERT OR A BREAKFAST FOOD?
Honestly, they could easily be both! No judgment here. Serve these delicious waffles for breakfast with a side of fresh fruit and yogurt, or serve them as a dessert with a nice scoop of your favorite vanilla ice cream! Either way is absolutely delicious.
How to make perfect waffles every time:
There are several little tips I have found to help make the best waffles that have the right amount of fluffiness, crispiness, and flavor every time!
- Do NOT over-mix the batter! You want to mix the wet and dry ingredients just until combined. Don’t use an electric mixer or get carried away with your whisk. It’s ok to have some lumpiness in the batter as long as the ingredients are well combined.
- Make sure to use the full tablespoon of baking powder as this will provide the “rise” to your waffles. It may also be a good idea to make sure that your baking powder isn’t expired! Baking powder loses effectiveness over time so the fresher, the better!
- If you haven’t used your waffle maker before, it may take a little bit of practice to achieve the perfect “doneness” of your waffles! I have one waffle maker that lights up when it is “done” cooking, but I actually like to cook them just a little bit longer than that. I have another waffle maker that doesn’t have a timer on it so I just have to keep checking. Some people (my kids!) prefer the waffles to be a little more soft and I like mine a little more well-done!
