Our family has been making traditional monkey bread for years, but I recently decided to try adding a little bit of cream cheese. Cream cheese mixed with brown sugar and stuffed in the middle of every single roll. Best idea ever!
My favorite cinnamon rolls are frosted with a cream cheese frosting and I absolutely love it, but sometimes I just don’t have time to make traditional cinnamon rolls. Pull apart cinnamon rolls (monkey bread) are just so much faster to make since they start with frozen rolls!
WHAT IS MONKEY BREAD?
Monkey bread is a pan of sweet breakfast rolls made with butter, brown sugar and cinnamon. You pour the mixture over frozen rolls. It’s like eating a cinnamon roll that was broken into easy pull-apart bites and you don’t have to actually go through the whole process of making the dough from scratch!
When to serve Monkey Bread
We usually eat Monkey Bread for breakfast, but we’ve had it for dessert many times as well! There really isn’t a wrong time to eat Monkey Bread, am I right?!
Ingredients in Cream Cheese Stuffed Monkey Bread
20 Rhodes rolls, thawed (follow package directions to thaw)
2 cups brown sugar, divided
2 sticks butter (1 cup)
5 Tbsp Cinnamon Sugar (4 Tbsp sugar + 1 Tbsp cinnamon)
8 oz cream cheese (softened to room temperature)
How to make Cream Cheese Stuffed Monkey Bread
Preheat oven to 350°.
In a small bowl, add the cream cheese and 1/4 cup of brown sugar. Mix together until well combined. Set in the refrigerator until ready to use.
In a small saucepan, melt the butter over medium heat. Add the rest of the brown sugar (1 3/4 C) and mix well. Bring to a light boil for about a minute. Pour 1/3 of the mixture on the bottom of a well-greased bundt pan.
Remove the cream cheese mixture from the refrigerator. Take each roll and slightly flatten, pulling with your fingers to spread it out a little bit. Place about 1 Tbsp of the cream cheese mixture in to the middle and then fold the dough around the mixture, rolling the dough into a ball with the cream cheese completely enveloped in the middle.
Place 10 of the rolls in the bundt pan and sprinkle with half of the cinnamon sugar. Pour another third of the brown sugar/butter mixture on top of that layer. Add the other 10 rolls, then the rest of the cinnamon sugar mixture and then the rest of the brown sugar/butter on top.
Let rise for about 30 minutes to an hour and then bake for 50-60 minutes. After about 35-40 minutes, you will need to place a piece of foil on top of the bundt pan to prevent the rolls from getting too brown. The easiest way to tell if the rolls are done in the middle is to use a thermometer. Once the internal temperature of the rolls is 190° F, the rolls are completely cooked through.
Immediately invert the bundt pan onto a plate and remove the pan. Just like all cinnamon rolls, these taste the best when fresh and warm!

WHAT KIND OF CREAM CHEESE DO I USE IN CREAM CHEESE STUFFED MONKEY BREAD?
I usually use regular cream cheese, but you can use low-fat or non-fat cream cheese and the recipe will still work well.
HOW TO SOFTEN CREAM CHEESE
Cream cheese is easy to soften – you can set it out at room temperature or soften it more quickly in the microwave.
-To soften at room temperature more quickly, just set the cream cheese on a plate and cut into smaller pieces. The cream cheese should reach room temperature in about 15-20 minutes with this method.
-To soften the cream cheese in the microwave, remove the foil packaging and set the cream cheese in a small bowl or on a plate. Microwave for about 10-15 seconds. If the cream cheese is still cold and hard, continue to microwave for about 5 seconds at a time until the cream cheese is soft throughout. Just make sure not to microwave it too long or it will start to melt!
WHAT PANS CAN I MAKE THIS MONKEY BREAD RECIPE IN?
If you don’t have a bundt pan to use, you can make this recipe in a 9X13 pan. Instead of having 2 layers, there will just be one, so put half of the brown sugar/butter mixture on the bottom of the greased pan and then put all the rolls in. Sprinkle all of the cinnamon/sugar on top and then the other half of the brown sugar/butter mixture on top of that. The rolls will cook faster this way, so keep a close eye on them. The rolls should be done after about 30 minutes when they are in a single layer.
