Our Homemade Rolls are fantastic served with Easter dinner!
We love having fresh bread with dinner, but sometimes I just don’t have time to make homemade bread from scratch. These rolls are so simple to make and they have great texture and flavor. Don’t let the sour cream confuse you either. You can’t taste it but it adds moisture without requiring a ton of added fat.
How to Make No Yeast Dinner Rolls
These homemade rolls are so easy! You don’t need an electric mixer or any special tools (although I do love my large cookie scoop!) Keep it fast and simple!
Here are a few tips on how to make the best homemade dinner rolls:
- Do NOT overmix! Just use a mixing bowl and a rubber scraper or spoon. Don’t use any type of en electric mixer as it’s incredibly easy to over mix the dough. Aim to mix the dough about 15 times and that’s it! I find it usually takes about 15 turns of the rubber scraper to get the ingredients incorporated.
- Grating the butter really makes your life so much easier. I promise! It’s super fast and works really, really well for quick bread recipes. Just use a basic cheese grater and make sure your butter is cold. Stick it in the freezer for 5 minutes and it works even better! Grated butter adds a wonderful texture and flavor to these rolls.
- Remember that the dough will be STICKY. Sticky dough yields soft, delicate rolls with amazing texture. Don’t try to shape these rolls, the dough is too soft. Spray a large cookie scoop or spoon with non-stick spray and scoop dough out and into the muffin tin cups.
- As with most baked goods, be sure to not over bake! Bake until golden brown and internal temp reaches 200°F. My all-time favorite cooking thermometer is the Thermapen. It’s super fast and incredibly durable. Another great thermometer is the ThermoPop which is a more basic version that works just as well!
Ingredients Needed for Dinner Roll recipe without Yeast

Here’s what you’ll need:
–2 eggs
–1/2 cup sour cream – you can also use plain Greek yogurt
–1/2 cup milk
–2 cups all purpose flour
–1 1/2 tsp baking powder
–1/2 tsp baking soda
–1 tsp salt
How to make Homemade No Yeast Dinner Rolls
First you’ll need to preheat the oven to 375 degrees F. Spray a muffin pan with non-stick cooking spray and set aside.
Whisk together dry ingredients. Set aside.
Crack eggs in a bowl and whisk. Add the sour cream and milk. Whisk until smooth.
Whisk half the flour into the egg mixture. Pour remaining flour into bowl. Grate 1/4 cup cold butter on top of the flour. Grating butter is a super fast way to mix small chunks of butter into the dough.
Use a rubber scraper to stir mixture until just combined. Dough will be sticky.
Spray a large cookie scoop or spoon with non-stick spray and scoop dough out and into the muffin tin cups. You’ll use about 4 TBSP dough per cup. Dice remaining 2 TBSP butter and add a small square to the top of each roll.
Bake 20-22 minutes at 375°F . Serve warm brushed with additional butter and topped with our Strawberry Freezer Jam. Yum!
Yields 12 dinner rolls.
Homemade No Yeast Dinner Rolls
Ingredients

- 2 cups all purpose flour
- 1 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1 tsp salt

Can you freeze Homemade Rolls?
Yes, you can freeze the homemade rolls in an airtight container for up to 1 month. I find after that 4 week mark, the texture and flavor of the rolls suffer.
Can you freeze homemade biscuit dough?
Yes, you can freeze this dough in an airtight container. Just mix the dough and transfer to the container and freeze. Thaw for 2-3 hours on the countertop. Scoop and proceed with the recipe as stated above. Do not freeze for longer than 1 month.

Can you put the batter into a loaf pan and make full size bread?

I’d not tried this recipe to make actual bread, but I’ve been meaning to! I think it’d be great! You might have to cover it though so that it doesn’t get too browned before the middle is cooked through.

Hi! Can I substitute bread flour instead of all purpose flour? If yes, will it be the same measurement? Do I add more milk, because with bread flour, bread tends to be a bit dry. Thank you.

I made these yesterday to have along with dinner and they were great. Something about them reminded me of yorkshire pudding and I was thrown back to roastbeef supper Sundays. Easy to make and I probably put way more graded butter oops haha. These will definitely be made again and again.
