I love fried chicken, but frying things in oil isn’t my favorite thing to do. Not just for health reasons, but it’s just a little messy and time consuming. This recipe doesn’t taste exactly like fried chicken, but has tons of flavor and is so easy to bake in the oven.
POTATO CHIP CHICKEN
Boneless, skinless chicken breasts are dipped in seasoned butter and then coated in crushed Lays potato chips. The chicken breasts are baked for about 45 minutes and then are ready to eat. Simple baked chicken recipe that is absolutely delicious!
IS POTATO CHIP CHICKEN GLUTEN FREE?
Yes! Most fried chicken or coated chicken recipes are made with flour and/or bread crumbs and are not gluten free. As long as you use regular Lays potato chips for the coating, you can get the crunchy coating without any gluten! You also need to make sure you are using a gluten free Worcestershire sauce since many versions do have gluten in them.
WHAT TYPE OF POTATO CHIPS TO USE IN POTATO CHIP CHICKEN?
Regular Lays potato chips work best, but if you want to change up the flavor a little bit, you can use any variety of potato chips you like. Sour Cream and Onion, Lime, Cracked Pepper…so many options!
EASIEST WAY TO CRUSH POTATO CHIPS?
There are lots of ways to crush potato chips, but the easiest way that I’ve found is to place the potato chips in a Ziplock bag and then use a meat mallet or rolling pin to crush them. In this recipe for Potato Chip chicken, you do not want to crush the chips too finely. Bigger chunks give more crunch and texture to the chicken.
WHAT DO YOU SERVE WITH POTATO CHIP CHICKEN?

INGREDIENTS IN POTATO CHIP CHICKEN
Chicken – You will need 6 boneless, skinless chicken breasts for the recipe. You can use chicken tenders if you prefer, but you would need about 12-18 of them depending on their size. One tip that I’ve picked up over the years is to use a meat mallet to slightly flatten the chicken breasts. You don’t want them to be flat, but it is much easier to cook them all to the correct temperature if they have been flattened to be the same size. Just slightly pound out the fattest parts of the chicken breasts so that the chicken breasts are more uniform in thickness all the way across.
Lays potato chips – This is the star of the recipe. The recipe calls for a regular 8 ounce bag of Lays potato chips (the ones in the yellow bag). Crush the potato chips to use them as the coating for the chicken. You can use other varieties of potato chips to change up the flavor a little bit.
Butter – You will need to melt a stick of butter so that you can mix in all of the other spices. Once the butter is seasoned up, you can dip the chicken in the butter mixture before dipping in the crushed potato chips.
Salt, pepper, garlic salt, onion salt, paprika – Just 1/2 teaspoon of each of these spices and seasonings will add so much flavor to the chicken recipe.
Worcestershire sauce – The recipe calls for a teaspoon of Worcestershire sauce. If you are trying to keep the chicken gluten free, make sure the Worcestershire sauce you are using is gluten free.
HOW TO MAKE POTATO CHIP CHICKEN
Preheat oven to 350°.
Spray a 9X13 pan with non-stick cooking spray.
Melt the butter in a shallow pan and mix in all of the seasonings. Place the crushed potato chips in another shallow pan.
Dip each chicken breast in the melted butter (flip over if needed to coat all sides) and then roll in the crushed potato chips until well coated. Place the chicken in the prepared pan and bake for 45 minutes or until the internal temperature reaches 165°.
Serve plain or with BBQ sauce, ketchup, ranch dressing or a honey mustard dipping sauce. We actually usually eat this chicken plain because the coating has so much flavor!

CAN POTATO CHIP CHICKEN BE FROZEN?
After the chicken has been baked and then cooled completely, you can freeze the chicken in an airtight container in the freezer for up to 6 months. You’ll want to thaw the pieces overnight in the fridge and then bake on a wire rack topped baking sheet to help air circulate around the chicken as it bakes to help maintain some of the crispy skin it once had. The skin will naturally soften through the freezing and thawing process.
CAN POTATO CHIP CHICKEN BE REHEATED?
Yes, to reheat the chicken and keep the skin crispy it’s best to use an oven with a wire rack topped baking sheet so that the air can circulate around it. You could also use a microwave for faster results but the skin will not be crisp. Air fryers work so well – this is definitely my preferred choice. Just make sure that the chicken is back to a safe consumable temperature before eating.
HOW CAN YOU TELL IF CHICKEN IS COOKED?
For many years, it really was just a bit of guessing game to know if chicken was cooked all the way through or not. And then I discovered a meat thermometer and now I use it all the time! I have 5 kids- getting distracted while cooking is a common occurrence for me and I detest overcooked chicken! Undercooked isn’t great either. 😳 If internal temperature of the chicken is 165°, your chicken will be perfect.
My all-time favorite meat thermometer is the Thermapen. It’s super fast and incredibly durable. Another great meat thermometer is the ThermoPop which is a more basic version that works just as well!
