Oven Baked “Fried” Chicken made with chicken tenders hand breaded in a simple coating and then baked in the oven. Tastes just like fried chicken without frying in oil!
I love fried chicken, but frying things in oil isn’t my favorite thing to do. Not just for health reasons, but it’s just a little messy and time consuming. This recipe is one that I’ve been making for years and it’s one of our family favorites. It really does taste just like fried chicken. And the breading used is so simple – it uses ingredients that I always have on hand. Melting a little bit of butter in the pan before baking the chicken helps to give the crispy coating that makes it taste just like your favorite fried chicken recipe!
What is Oven Baked Fried Chicken?
Moist and juicy chicken tenders that are coated in a seasoned flour coating and then baked in the oven in a dish coated with a bit of melted butter. These chicken tenders are loaded with flavor and have a perfectly crisp outer coating – no frying or oil involved at all! But they really are just as tender and juicy as fried chicken!
Ingredients in Oven Baked Fried Chicken
8-10 chicken tenderloins
4-5 cups of milk (maybe a little more or less depending on how shallow of a dish you use)
1/4 cup butter, cold
1/2 tsp salt
1 Tbsp seasoned salt (Season-All, Lawrys, etc)
3/4 tsp pepper
1 cup flour
2 tsp paprika
How to make Oven Baked Fried Chicken
Place chicken tenderloins in a shallow bowl or baking dish and cover completely with milk. Let soak for 20- 30 minutes.
In a mixing bowl, mix the salt, seasoned salt, pepper, flour and paprika.
Preheat oven to 400. Cut butter in small pieces and place in a 9X13 pan. Melt butter in the preheated oven and spread around to evenly coat the bottom of the pan.
Shake excess milk off chicken and completely coat each piece with the seasoning mix. (If the chicken doesn’t seem to be well coated, you can dip the breaded chicken back in the milk and then re-coat in the seasoning to get a double coat on there!)Place each piece of chicken in the pan. Cook for 20 minutes. Turn each piece of chicken over and cook for another 20 minutes. (Internal temperature of the chicken should be 165°.)
Serve plain or with BBQ sauce, ketchup, ranch dressing or a honey mustard dipping sauce. We actually usually eat this chicken plain because the coating has so much flavor.

CAN BAKED FRIED CHICKEN BE FROZEN?
After the chicken has cooled completely, you can freeze the chicken in an airtight container in the freezer for up to 6 months. You’ll want to thaw the pieces overnight in the fridge and then bake on a wire rack topped baking sheet to help air circulate around the chicken as it bakes to help maintain some of the crispy skin it once had. The skin will naturally soften through the freezing and thawing process.
CAN BAKED FRIED CHICKEN BE REHEATED?
Yes, to reheat the chicken and keep the skin crispy it’s best to use an oven with a wire rack topped baking sheet so that the air can circulate around it. You could also use a microwave for faster results but the skin will not be crisp. Air fryers or other convection style cooking appliances may also work. Just make sure that the chicken is back to a safe consumable temperature before eating.
