Casseroles are perfect for weeknight dinners and this one is absolutely delicious. Only about 10 minutes of prep is needed to make an easy version of stuffed peppers. You don’t even have to bake this one! Everything cooks together in one pot on the stove and is ready in 35 minutes!
FRENCH ONION BEEF RICE CASSEROLE
This casserole has so much flavor! Mix ground beef with rice, beef broth, cream of mushroom soup, sour cream, cheddar cheese, Lipton French Onion Soup mix, onion, and garlic. Top the casserole with french fried onions and bake until hot and bubbling. Dinner is ready to serve!
WHAT TO SERVE WITH FRENCH ONION BEEF RICE CASSEROLE
A great thing about casseroles is they make a fantastic meal all on their own. If you do want to add something on the side, a slice of Homemade Bread or a 30-Minute Dinner Roll works great too! INGREDIENTS IN FRENCH ONION BEEF RICE CASSEROLE
Oil: Use a tablespoon of olive oil (or vegetable oil) to help brown the beef and cook the vegetables.
Ground beef: You will need one pound of ground beef. You can swap this out with ground turkey if you prefer.
Onion: Yellow onion works best in this dish. I always buy diced onions from the frozen section in the grocery store and keep them stocked up so that I can use them for recipes like this one. I haven’t chopped an onion in years!
Garlic: I always keep a jar of minced garlic in the refrigerator to save time and effort, but fresh garlic works well too!
Rice: You will need 2 cups of instant white rice. Instant rice is the quickest, but you can use regular rice if you’d like. If you do use regular rice, you will need more liquid to cook it in, so increase the amount of beef broth to 3 cups instead of 2 for cooking the rice.
Beef broth: The recipe calls for 2 ½ cups of beef broth. Two cups of broth are used to cook the rice before adding to the casserole.
Cream of mushroom soup: A can of condensed cream of mushroom soup adds so much flavor to the casserole.
Sour cream: A cup of sour cream adds creaminess to the casserole. You can swap this out with plain Greek yogurt if you want to decrease the calories and add more protein.
Cheddar cheese: Cheese is always a good idea! A cup of shredded cheddar cheese adds a lot of flavor.
Lipton French Onion Soup Mix: An envelope of Lipton French Onion Soup mix has all of the right seasonings for the casserole.
French fried onions: Just 1/2 cup of french fried onions sprinkled on the top of the casserole add a lot of crunch and flavor too!
HOW TO MAKE FRENCH ONION BEEF RICE CASSEROLE
Preheat oven to 350°F. Grease a 9×13-inch baking dish with non-stick cooking spray, and set aside.
Bring 2 cups of beef broth to a boil in a medium saucepan. Turn off the heat and stir in the instant rice. Cover and let sit for 5 minutes.
While the instant rice sits, heat olive oil in a large skillet over medium heat. Add the ground beef and onions and cook, breaking the beef up with a spoon, until browned. Drain any excess fat.
Add the minced garlic and cook for 1 minute. Remove from heat.
Stir in the cream of mushroom soup, sour cream, shredded cheese, French onion soup mix, remaining beef broth, and rice. Pour the mixture into the prepared baking dish. Cover tightly with foil.
Bake for 15 minutes. Remove the foil, sprinkle the french fried onions on top, and bake for an additional 10-15 minutes, or until the casserole is cooked through and the liquid is absorbed.
Let cool slightly before serving.
FRENCH ONION BEEF RICE CASSEROLE

- 2 garlic cloves minced
- 2 cups instant white rice

- 10.5 oz can condensed cream of mushroom soup
- 1 cup sour cream
- 1 cup shredded cheddar cheese
- 1 envelope dry Lipton French Onion Soup Mix
- ½ cup french fried onions
Instructions

HOW TO STORE LEFTOVER BEEF AND RICE CASSEROLE
You can keep the leftovers in an airtight container for up to 5 days in the refrigerator. This is a great meal prep recipe!
CAN YOU FREEZE BEEF AND RICE CASSEROLE?
I don’t freeze rice dishes, as I don’t love the consistency of the rice when thawed out, as it gets a bit too soft. If you left the rice out you could definitely freeze the dish and add the rice before serving.
