Oreo cookies: You will need one 14.3-oz package of Oreo cookies (Golden or Lemon flavor).
Melting chocolate: Use 1 ½ pounds of white melting chocolate, either wafers or almond bark. As well as ½ pound of pink melting chocolate. Note: Using white chocolate chips for this recipe is a bit more difficult, they do not melt or coat the Oreo balls as well.
How to make Easter Bunny Oreo Truffles
Prep
Crush the Oreo cookies in a food processor or blender, until they resemble a fine crumb. Transfer the cookie crumbs to a large mixing bowl and add the softened cream cheese. Stir until the mixture is well combined.
Line a baking sheet (that will fit in your freezer & fridge) with parchment paper.
Shape
Use a 1 ½ tablespoon cookie scoop to measure out the truffles and roll into balls. Set them on the tray lined with parchment paper.
Place the tray with the truffles into the freezer to chill for about 15 minutes, this will make the dipping process much easier.

Assemble
Melt the 1.5 pounds of white chocolate in 30 second intervals in the microwave until smooth and melted.
Then dip each truffle ball into the white chocolate, using 2 forks to shake off excess chocolate and place them back onto the parchment paper.
Pour the remaining melted white chocolate into a ziplocked bag and snip off a tiny corner. Pipe a little round bunny tail on the top of each truffle.

In a small bowl, melt the pink chocolate in 30 second intervals until it’s melted and smooth. Place the melted chocolate into a ziplocked bag and snip off a small corner. Remove the bunny truffles from the fridge and flip each one over. On the bottom of each foot, pipe 2 bunny toes and a little footpad on each foot. Place them back in the fridge to chill until set for about 5 minutes.
Pipe more white chocolate onto the back of each bunny foot and attach two feet to each truffle. Let them set, then serve, and enjoy!
