Easter Bunny Oreo Balls

Ingredients

  • 8 oz cream cheese softened
  • 14.3 oz Oreo cookies Golden or Lemon
  • 1 ½ lbs white melting chocolate either wafers or almond bark
  • ½ lb pink melting chocolate

Instructions

  • Prep: Crush up the Oreos in a food processor or blender, until they resemble a fine crumb.
  • Transfer to a large mixing bowl and add the softened cream cheese. Stir until everything is well combined.
  • Line a baking sheet (that will fit in your freezer & fridge) with parchment paper.
  • Shape: Use a 1 ½ tablespoon cookie scoop (medium) to measure out truffles & roll into balls. Set on the tray lined with parchment paper. Place the tray with the truffles into the freezer to chill for about 15 minutes, this will make dipping much easier.
  • Assemble: Melt 1.5 pounds of white chocolate in 30 second intervals in the microwave until smooth and melted.
  • Dip each ball into the white chocolate and using 2 forks shake off any excess chocolate and place back onto the parchment paper.
  • Pour the remaining white chocolate into a ziplocked bag and snip off a tiny corner. Pipe a little round bunny tail on the top of each truffle. Then pipe 40 oval bunny feet shapes on the parchment paper, set the tray into the fridge to cool for 15-20 minutes.
  • Finish bunnies: Melt your pink chocolate in 30 second intervals until melted and smooth. Place it into a ziplocked bag and snip off the corner. Remove the bunny feet from the fridge and flip each one over.  On the bottom of each foot, pipe 2 bunny toes and a little footpad on each foot. Place them back in the fridge to chill until set about 5 minutes.
  • Pipe more white chocolate onto the back of each bunny foot and attach 2 to each truffle. Let set, then serve and enjoy!

Notes

Store leftovers in an airtight container in the fridge for up to 5 days.
