Easy Easter Cookies
One of my favorite ways to get festive around holidays is with easy desserts. I am not much of a decorator but I can definitely whip up a festive dessert that will no doubt be devoured far too quickly. 😉 Making easter desserts are not only good for your taste buds but it can be a wonderful family activity! Nothing brings the family together like being in the kitchen, creating food and then sitting down to eat together.

What is in No Bake Birds Nest Cookies?
Great news for you, all of the ingredients in this recipe are very common and ones you likely already have in pantry! (Although, if you are anything like me, you’ll have to go buy more chocolate eggs. Those never last long at my house!)
- Granulated Sugar:Â For this recipe we will use regular, white granulated sugar. You’ll need a total of 2 cups for this recipe.
- Unsweetened Cocoa Powder:Â You can use any brand you’d like, to be honest, I usually have the store name brand and it works perfectly! You can substitute dutch processed cocoa powder if that is what you have on hand or what you prefer. This will yield to a darker color and richer chocolate flavor.
- Milk:Â The fat percentage does not matter in this recipe. I have used skim milk as well as whole milk when I had it on hand. Both work perfectly well!
- Butter:Â Definitely use butter and not margarine in this recipe. Margarine will sometimes make the cookies extremely soft and they won’t set up properly. We will need half of a stick or 1/4 cup of butter for this recipe.
- Peanut Butter:Â You can use either creamy or crunchy here! I generally use creamy but if you like the little extra crunch, go for the crunchy!
- Vanilla Extract:Â Pure or imitation will work well. We will use 1 tsp.
- Oats: I have actually used both quick oats and rolled oats. Both work great in this recipe! Have 2-3 cups on hand when making these cookies.
- Chocolate Eggs-Â Chocolate eggs. *heart eyes* I generally use Cadbury Eggs, but you are definitely not limited to that brand! We will talk a bit about other options below.
How to Make Bird’s Nest Cookies
Making the birds nest cookies is an extremely simple process that will only take about 10-15 minutes! This recipe will be made on the stovetop. In a medium sauce pan, sugar, butter, milk and cocoa powder are combined until it comes to a boil. It is important to allow the mixture to boil for 1 minute. If it doesn’t boil long enough, the cookies will not set up.
After removing the mixture from the heat, we will add in the peanut butter and vanilla. Stirring until smooth, the heat of the mixture will melt the peanut butter quickly and make this an easy process. Now, slowly add in those oats, stirring until well combined.
Use either a spoon or cookie scoop to portion out your cookies onto parchment paper. Immediately after dropping the cookies, place 2-3 chocolate eggs in the middle and allow the cookies to cool completely before moving or serving. This will take about 30 minutes.
Chocolate Easter Egg Options
Now there are a lot of options when it comes to colorful chocolate eggs! You can use the classic, Cadbury Eggs (they now come in dark chocolate variety) or you can find peanut butter M&M’s in the shape of an egg that I think would be absolutely delicious paired with this chocolate cookie. Robins’s eggs (like whoppers) would also be a great option!
Chocolate Birds Nest Easter Cookies
Ingredients
- 2 cups granulated sugar
- 1/3 cup cocoa powder
- 1/2 cup milk
- 1/4 cup butter
- 1/2 cup peanut butter
- 1 tsp vanilla
- 3 cups oats
- 60 chocolate eggs
Instructions
- Combine the sugar, cocoa powder, milk and butter in a sauce pan over medium high heat.
- Bring to a boil.
- Boil for 1 minute and then remove from heat.
- Stir in the peanut butter and vanilla until completely combined.
- Stir in the oats.
- Scoop the cookies onto parchment or wax paper. Immediately, press 2-3 eggs into the center of each cookie.
- Cool completely before serving.
