I love this Creamy Pineapple Lemon Jello recipe! It works great as a side dish or a dessert and doesn’t take more than a few minutes of prep time to make. The lemon flavor is so strong because the recipe calls for lemon pudding AND lemon jello. A great deal of the creaminess of this jello comes from sour cream, but you can swap that out with Greek yogurt and get a little bit of protein from your dessert too!
CAN I USE A DIFFERENT FLAVOR OF JELLO?
The best part about this recipe (and many other Jello recipes), is that you can use any flavor of Jello you want! I really like strawberry or raspberry jello mixed with the lemon pudding, but you could swap out the lemon pudding with vanilla and use any flavor you’d like. Lemon with strawberry and pineapple is absolutely delicious!
Ingredients in Creamy Pineapple Lemon Jello
Lemon pudding – You will need one small box (3 ounces) of lemon pudding mix. Make sure that you use the instant kind!
Milk – You will mix the pudding with the milk just like you normally do when making pudding. You can use any type of milk that you’d like. Almond milk or rice milk work just fine too!
Sour cream – You will need a cup of sour cream to mix in with the pudding to help thicken it up even more. You can also use plain Greek yogurt instead. I’ve even used vanilla Greek yogurt and the flavor is different, but is delicious too!
Crushed pineapple – Use a 15 ounce can of crushed pineapple and drain it really well. Just make sure to reserve all the of the juice that you drain so that you can add it to the jello. It’s easiest if you use a fine mesh strainer and hold it over a bowl while you dump the pineapple into it. At that point, I use the back of a spoon to press the pineapple down to squeeze out even more of the liquid. Continue to do that until no more juice is dripping.
Lemon jello – You will need 2 small boxes of lemon jello.
Boiling water – Ok, so technically this is the 6th ingredient, but since it’s water, I didn’t count it! But don’t leave it out because it’s pretty important! You can boil the water however you’d like – I usually do it in the microwave, but you can use a tea kettle or just a regular saucepan over the stove.
How to make Creamy Pineapple Lemon Jello
Mix pudding with milk as directed on package.
Add sour cream and beat until smooth.
Drain pineapple and reserve juice.
Dissolve jello in boiling water. Add the reserved pineapple juice to jello and let it cool to room temperature (about 30-60 minutes), but don’t let it set up more than that.
Mix jello mixture with pudding and stir until smooth. It is much easier to get the mixture to incorporate smoothly with a whisk. Fold in pineapple and chill in the refrigerator until set. If you pour the jello into individual parfait dishes, it will set up much faster.

- 2 cups milk
- 1 cup sour cream
- 1 15 oz can crushed pineapple
- 2 3 oz pkg lemon jello
- 2 cups boiling water
Instructions
- Mix pudding with milk as directed on package.
- Add sour cream and beat until smooth.
- Drain pineapple and reserve juice.
- Dissolve jello in boiling water. Add the reserved pineapple juice to jello and let it cool.
- Mix jello mixture with pudding and stir until smooth. It is much easier to get the mixture to incorporate smoothly with a whisk. Fold in pineapple and chill in the refrigerator until set. You can pour the jello into a large bowl and scoop it out after it is set, but if you pour the jello into individual parfait dishes, it will set up much faster.

Is Creamy Pineapple Lemon Jello healthy?
I wouldn’t call Jello a health food, but it is usually lower in calories than many other desserts. If you use skim milk and swap out the sour cream with non-fat Greek yogurt, there are only 187 calories per serving (41C, 1F, 7P).

HOW DO YOU STORE JELLO SALAD?
This particular jello salad recipe stores very well in the refrigerator for up to 3-4 days, but is not ideal for freezing. There really is no need to freeze this recipe because you can make it so quickly!
